How about a dish from Uzbekistan? It's made with lamb, vegetables and potatoes. It's called Dimlamah
Ingredients:
lamb (1 lb) cut into small pieces (half the size of kabob meat)
potatoes (3 large ones)
celery (4-5 stalks) chopped into medium sized pieces
carrots (6 medium) cut into3/4 inch pieces
cabbage (1/2 to 3/4 cabbage) sliced
tomatoes (chopped) 2-3
onions (2 medium yellow) chopped
garlic (3 cloves) chopped finely
peppercorns (10)
salt to taste
dill seed (whole not ground) 2 tsp
bay leaves (dried) 3
Have all the ingredients ready, cut up as needed and keep the meat separately.
Use a covered casserole dish (French enamel is really good or stainless steel).
Brown all sides of the meat in a bit of olive or other vegetable oil.
Add all the vegetables mixed with spices spices on top. Cover the dish and bring the heat down to low. Cook on the stove top on low heat for 45 minutes, or until it's wonderful smell compels you to eat it!
You should not take the top off the dish to check on it or to stir it more than once. The steam from the vegetables and meat work so well together to make it develop perfectly, so you should never add any extra liquid.

This is a great recipe. I don't measure but it will work if you just throw it all together. Cut up chicken breast, green onions, red and green peppers(cut in thin strips) diced canned tomatoes. Saute in coconut oil. Add curry powder to taste and fresh ground pepper. Throw in unsweetened coconut milk. Simmer for a minute. Pour over rice and enjoy.Yumo I guess it is called Chicken Curry. Very healthy too!
