Beef with Lemon Grass - Vietnamese Recipe
2 stalks fresh lemon grass,
1 pound lean beef filet or eye of round
2 fresh red chile peppers, seeded and minced
6 garlic cloves, minced
3 tablespoons nuoc mam (Vietnamese fish sauce)
1 teaspoon arrowroot or cornstarch
freshly ground black pepper
6 tablespoons vegetable oil
2 medium onions, cut into slivers
1 tablespoon sugar
1/4 cup roasted peanuts coarsely ground
coriander sprigs, for garnish
Discard the outer leaves of the Lemon Grass and upper half of the stalk. Slice paper-thin and chop very fine.
Cut the beef across the grain into very thin 2 by 3-inch slices. Pound the meat lightly with the flat side of a cleaver.
In a bowl, combine the beef with the lemon grass, chiles, half of the garlic, 2 tablespoons of the fish sauce, the arrowroot, black pepepr to taste and 2 tablespoons of the oil. Mix well. Set aside for 30 minutes.
Heat a large skillet over moderately high heat and add 2 tablespoons of the oil. When the oil is hot, add the onions and the remaining garlic; stir-fry for about 3 minutes, or until golden brown. Remove the onions with a slotted spoon to a plate. Add the remaining 2 tablespoons oil. When the oil is hot, add the beef, the remaining 1 tablespoon fish sauce and the sugar. Saute over high heat for 1 or 2 minutes, or until the beef is just cooked. Transfer the mixture to a heated platter.
Arrange the sauteed onions around the meat mixture; sprinkle the peanuts and black pepper over all. Garnish with coriander.

Lemon grass is often used in big pieces for flavoring dishes, but for this Thai recipe it's heavily bruised so it can be eaten along with the chicken. Both the lemon grass and garlic become darkly caramelized and richly flavored during cooking.
Lemongrass Chicken
Ingredients
2 stalks fresh lemon grass
1 lb chicken thighs, boneless and skinless is preferred; wash thoroughly and cut thighs in half)
3 cloves garlic (minced)
1/4 tsp freshly-ground black pepper
1/2 tsp ground Thai chili (prik haeng)
2 tbsp palm sugar
1 tsp sea salt
2 tbsp Thai fish sauce (Golden Boy brand is preferred)
4 tbsp peanut oil
Preparation
Cut off the woody tops and bottoms of the lemon grass. Remove the outer 2-3 layers of the stalk and cut the tender middle section into 1 inch lengths. Bruise the lemon grass by hitting it with the back of a Chinese cleaver or pound it in a mortar and pestle.
Combine bruised lemon grass, chicken thighs, garlic, black pepper, ground Thai chili, palm sugar, salt, and fish sauce in a bowl. Mix thoroughly and refrigerate for 1-2 hours.
Heat a wok over medium-high heat and add the peanut oil, swirling to coat the entire surface. Heat the oil for 1 minute and add the marinated chicken mixture. Stir-fry for 15 minutes (the chicken and sauce will thicken and become caramelized). Remove from heat and serve with cold cucumber slices, lettuce, and jasmine rice or sticky rice.
Serves 4.

Lemon grass is great on salmon dishes, and lemon pepper chicken. It adds a lot of lemon flavor, however, when cooked, still retains the grassy texture.

Lemon grass is a favorite condiment among Asian peoples. Chop it up, sprinkle it on fish as you saute it, or use it with cubed pork when you stir fry. It's a very versatile herb.
