I was able to release my grip of cheese by considering how much saturated fat is in it. It's not too far off from butter. Also, consider the smell of cheese. Parmesan and cheddar in particular smell like vomit. Read up on www.nomilk.com. There are some interesting things there. You are correct, most of the fake cheeses are an acquired taste. Follow your Heart brand is vegan, fatty like real cheese and melts more like real cheese on pizza and nachos, but not so much in a grilled cheese. Whole Foods market is the only place I've seen it, but you can look at Follow your Heart's website to find some near you.
Vegan mayo that isn't reduced fat should taste similar to regular mayo because it is mostly whipped oil. It's up to the manufacturer to decide it the mayo will be sweet, salty or vinegar in it's "flavor. Try brands other than veganaise by Nasoya, I don't like it either.

I had a hard time giving up cheese until I read articles on the dairy industry, which supports veal. There aren't any vegan cheeses in my area so I just stopped eating it all together. it's easy to find other things... i.e. avocado on sandwhiches and burritos it's creamy like cheese and I like mustard instead of mayo. I used to put globs and globs of mayo on sandwhiches but I haven't eaten any in 6 months and now the thought of it makes me sick. Good luck :)

Continue to eat cheese and mayo. If you don't like the vegan alternatives, don't eat them. Besides, most commercial mayos are made w/ emulsiifiers, not eggs anyway.

For Becky,
Either done by the IGNORANT or the MALICIOUS ~ either way it is wrong and it is very, very , very GROSS>
The Suplicational SLAVERY of a cow ~ not knowing any other life b/c they were 'herded' into that position. (imagine humans so "broken down" and made to do some things similar) ~ a film could be made to illustrate if need be.

Hope in higher understanding

I went vegan with the help of a massive "operation" or was it just a little?

search the net for alternatives from companies who do mail order? Or buy normal cheese from a supplier who treats their animals well so that no animal suffers in the making of the product. Milking a cow is necessary, it is not always done inhumanely.

you eat what you feel is ok. Eat cheese and do give up other things . If you like it then you can not give it up deep in your heart. Besides cheese is made from milk and milk coms from a cow who will die if she is not milked.
