color (duh?) are there any flavor characteristics that distiguish two from each other?

Light is saltier and mostly use to make the food well, saltier but only a little bit healthier than salt.

Black soy sauce is sweeter, it doesn't taste the same like the light soya sauce. It is mostly put together with light soya sauce to give the food a more darker colour. Say for example, you want to cook a sauteed beef with soya sauce, with only the light soya sauce, the beef will not look appetizing but put a black soya sauce, the taste and colour will look better. Try it at home with chicken, beef or pork.

Dark soy sauce is brewed or fermented longer so will have a stronger flavor.

dark is sweeter & light is saltier. both give similar taste to food, the light doesn't stain & the dark one give a brownish fried look to the dish.
