The essence of make good tasty fried rice is the flame control and ingredients.
1) Used Thai long grain rice cook and leave overnight, good fried rice must be "grainy" not starchy.
2) Heat wok with medium small heat with generous amount of oil,
add some chop garlic and scollots and stir fried oil. Add some salt to favor the oil mixture *Low Heat
3) Lightly beat 2 or 3 eggs in a bow with light soya source, *do not over scrammble until eggs bubble.
4) Turn up flame to *medium and pour eggs into wok, *do not flip eggs to char the other side.
5) While the eggs are half done, turn up flame to full and put prepared rice onto the eggs, quick stir fried, toss the wok if u can, the rice should turn a little yellowish coated with eggs and become grainy. Stir fry continously for about 3 mins.* Note do not add soya souce or water while stir frying, good fried rice should taste just right with the right amount of salt and soya u initial favor.

Boil rice (or buy microwave or frozen rice it doesn't clump together) fry a little butter and a spot of oil (this stops the butter from burning) in a frying pan, add some chopped onions, fry until golden and soft, then when the rice is cooked chuck it in the frying pan and make a well in the centre, beat an egg and add it in the centre, where you made the well, when its begins to form a scrambled consistency, fold it into your rice and onions, voila, lovely egg fried rice, don't forget to add a little salt or else it will be bland finally add some soya sauce, not too much or it will be wet, you will know how much by guess work.

Really easy. The secret is to use cold rice. Put some oil in a pan, fry 1/2 onion, 1 finely sliced garlic clove, bite size pieces of meat (optional), some grated carrots, some green peas, some green beans chopped into pieces, when nicely fried, put them in a side of the frying pan and break one or 2 eggs on the other side, and scramble them and fry them. Mix everything together, add the rice, some finely sliced red chili and spring onion. Then add salt and pepper, and voila! By the way, if you can find litte packet of "Cina Nasi Goreng" at a chinese supermarket used that, it's superb to compliment fried rice. Just poor it just before adding the rice.

Fried rice is a left-over dish. To be successful the rice should have been boiled the day before. Make an omelette, let it cool, cut it in strips and spread over the frying rice to warm it through. A few pre-cooked prawns wouldn't go amiss. Finish with a garnish of spring onions (scallions) and a sprinkling of light soy sauce.

1) firstly heat up the wok or frying pan
2) then pour a little oil into the wok or frying pan
3) afterwards scramble some eggs together and pour the mixture into the wok/frying pan
4) using a spatula mix the egg mixture up to prevent it from sticking to the wok
5) thrown some chopped chicken, peas, pork or whatever meat and vegetables and stir
6) you then add the rice- pre-boiled and cooked rice is better, although cold rice is okay too- and mix it altogether and heat for a few more minutes
7) serve the rice on plates or bowls and eat!

If you made fresh rice today keep it to use for tommorow.
The best way to make fried rice is use day old rice.
add some peas, carrots.
fried 3 eggs.
use light colour soya sauce not dark (if use dark your rice will be BLACK!)
of course the oil.

EGG FRIED RICE

1 tablespoon peanut oil
4 large eggs, lightly beaten
4 cups cold unsalted steamed white rice
3/4 teaspoon salt
1/2 cup thinly sliced scallion greens (3 to 4 scallions)
1 to 2 teaspoons Asian sesame oil
Special equipment: a well-seasoned 14-inch flat-bottomed wok




Heat wok over high heat until a drop of water vaporizes instantly upon contact. Add peanut oil, swirling to coat wok evenly, and heat until hot and just smoking. Add eggs, tilting wok and swirling eggs to form a thin even layer on cooking surface, and cook 30 seconds, then add rice and salt and stir-fry, breaking up eggs and letting rice rest several seconds between stirs, until rice is hot, 2 to 3 minutes. Add scallion greens and sesame oil (to taste) and stir-fry until combined well.

The trick is to have the rice cooked and cooled, rinse it through with cold water, let it drain before frying. Have the egg ready scrambled too! A few peas and a bit of onion, delicious!

fry some onions with garlic in a little oil, then add some cooled cooked rice. Mix until fully heated, then add some beaten eggs, stir until egg is cooked, then add a little salt and pepper, a splash of soy sauce.
PERFECT.
