There are plenty of vegetarian products in supermarkets to help make meals interesting. There are also some really good recipe books available that can help too. I'm not vegetarian either but the rest of the family are - it just took a bit of lateral thinking to get used to the idea. A particular favourite is chilli beans and cheese on nachos with guacamole and soured cream to serve.

So delicious :

Baked Corn

INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

Veggie Burgers

"Burgers that taste like hamburgers, but without meat! You can replace the Cheddar cheese with Monterey Jack or any other cheese you like. If you prefer, you may use a 1.4 ounce packet of brown broth in place of the soy sauce."

--------------------------------------------------------------------------------

INGREDIENTS:
2 teaspoons olive oil
1 small onion, grated
2 cloves crushed garlic
2 carrots, shredded
1 small summer squash, shredded
1 small zucchini, shredded
1 1/2 cups rolled oats
1/4 cup shredded Cheddar cheese
1 egg, beaten
1 tablespoon soy sauce
1 1/2 cups all-purpose flour

--------------------------------------------------------------------------------

DIRECTIONS:
Heat the olive oil in a skillet over low heat, and cook the onion and garlic for about 5 minutes, until tender. Mix in the carrots, squash, and zucchini. Continue to cook and stir for 2 minutes. Remove pan from heat, and mix in oats, cheese, and egg. Stir in soy sauce, transfer the mixture to a bowl, and refrigerate 1 hour.
Preheat the grill for high heat.
Place the flour on a large plate. Form the vegetable mixture into eight 3 inch round patties. Drop each patty into the flour, lightly coating both sides.
Oil the grill grate, and grill patties 5 minutes on each side, or until heated through and nicely browned.

hi, im 16 and a full time veggie. you could try:
-pizza, this is always good to get the kids involved in cookings, makes it fun put things like peppers, mushrooms on it. make faces etc.
- use soya mince, its made from vegetables but looks like dried mince, it tastes only slightly different, its great for lots of italian recipies e.g bollanaise, canalloni, lasagne
- stirfries, quick and easy
- potatoe based bakes, like potatoe and cheese bakes, tasty
- vegtable burgers and sausages, although they sound bad (and sometimes look bad!) they are very tasty. Try the birdseye ones, they have real vegetable peices in them.

There are lots of things for them to eat but really, if you are a complete novice in this field, it is better to buy a recipe book or go on the web.
