Will the nutrients in mong dal get destroyed if I cook in cooker which is cooked at high temperature?

Answer is No.

Tip for cooking.

If water separator came with the cooker use it.

If it did not come with such device use as little water as possible.(Trail and error is the answer). If it turns out too dry you can boil some water and add it and mix it up. Trick is to avoid burning it.

You can put a smaller vessel inside the cooker, put very little water and dal in it. Put some water (enough) in the cooker also, after the dal is cooked use this extra water to make dal little more liquidy if you like and throw the exess out or drink it like tea or soup.

Reason:

Pressure cooker is preferred to over the stove open/covered vessel cooking.

In all cases it is not possible to estimate amount of water required and we put lot more water and when the food is cooked we are in habit of throwing away the extra water, with it we loos some food value.

High temp cooking in pressure cooker is faster, convenient , locks in most of food value/flavours and beneficial.

what is the ideal temperature to preserve nutrients of fruits ,vegetables, pulses etc as it is practically impossible to eat raw vegetables?.

Answer:

This varies but if you use pressure cooker with 3 settings then low settings should be good for most of these.

For detail info on this go to library and find few cook books and it will have exact temperature for each items or group of items.

Google is at the top of this page you can search it on Google.

Only vegetables and greens loose thier Vitamin content after cooking them.
Staple food like dals and rice sort of stuff, contain Carbohydrates and Proteins. So cooking them at high temperatur does not effect their nutrient value.

dals mainly contain proteins and carbo hydrates. cooking them in a cooker does not affect the food value. vitamin containing food items such as vegitables loose their food value if cooked at high temparature. some foods like meat are required to be cooked at high temparatures so make them eatable and safe.
