can anyone suggest a good way to cook brown rice. pls give vegetarian recipes only. i'd ideally like to cook it as a main dish so inclusion of some veggies in the recipe would be grand!

Simplest Spiced Brown Rice with Corn:
cooking time: 1 hour
preparation time: 5 mins.

i ngredients:

2 cups water
1 cup brown rice
1tbsp. salt
1tbsp.olive oil
1 cup frozen corn
1/2 tsp. dried cilantro
1/2 tsp. cumin

1. in a saucepan or pot . pour the water. rice, olive oil. salt. andbring to a boil. mix in the corn kernels, cilantro, and cumin. reduce the heat and cover the pot. and let simmer for about 45-60 mins., until the liquid has been absorbed. serve. 4-6 servings.

Italian Style Brown Rice

igredients:
2 cups brown rice
1 can tomatoes whole
1 cup frozen sweet corn
1/2 cup green bell peppers, fresh and diced
1 medium size diced onion
1tbsp. crushed garlic
1 tbsp, dried oregano
tabasco or hot red pepper sause

in a covered pot first bring to a boil the 2 cups of water. while the water is heating ,add the diced onion, crushed garlic, the corn and the diced green peepers to the pot.. mix in the open can of tomatoes and pour the liquid into the pot.. add the oregano and the hot pepper sauce. when the contents come to a boil. add the brown rice. simmer until the liquid is absorbed. if the rice isnt tender, add a little water until the rice is tender. serve with salad of mixed vegetables

You can use brown rice in almost any recipe requiring rice, just remember that brown rice takes longer to cook. Either that or use a recipe that requires the addition of rice that has been pre-cooked. To make it taste more interesting add some vegetable stock. I have put in the source box the vegetarian society website, but have a look at the BBC website too.

2 cups brown rice (uncooked)
2 cups lentils (uncooked)
2 cups carrots (peeled and sliced)
2 cups broccoli (chopped up)

Salt & pepper to taste

Cover all of this with water and bring to a boil, then turn down to simmer and cover until the water is absorbed... this may take a little trail and error. it's not exact because I don't cook with exact measurements. It is a great dish for a vegetarian dinner and if you keep some in the fridge it's great for when you are in a hurry. Sometimes I put soya sauce on it, others I add curry paste to the pot at the very beginning. It's very versatile and you can change it to your liking every time. Once I even added curry powder and raisins at the very beginning.... I'm ca-ray-zee!

In general brown rice can be cooked just like regular rice and takes little longer to cook and need about 21/2 cup of water per cup of rice, salt to taste1/2 tea sp is my taste little olive oil or butter or ghee(1/2 to 1 tea sp). To be exact check the packaging for amount of water per cup of uncooked rice.

You can generally add spices and vegetables,nut, dried fruits... of your choice while cooking the rice or you can sote (fry lightly) it separately and mix/assemble it latter. (Some times you can try lightly frying the rice before cooking in water, will require slightly more water and time to cook).

When done you can name it by ingredients with some exotic prefix or suffix that you can think of.

EG

Brown rice a la magnific/gran ( amy, john,king, raja, rani,.......), with almond, resins ...........

PS

There are recipes in the cook books at your library and on Internet also some recipes have both meat and vegetables but you can live out the meat and cook with veggies only.
It is more fun to invent your own and experiment . Trick is to write down as you go and and add your remarks after cooking and eating to improvise next time. This will let you duplicate the recipe in future.

rice 1cup onions 2 sliced tomatoes 3 sliced green chillys 2/3 slited carrot,beans,caulifour,potatoe 1 cup mixed soya nuggets 1/4cup cloves 3 cinnamon 1 inch cardamom 2 bayleaf 1 ginger garlic paste 11/2tsp oil red chilly pd to taste turmeric 1/4tsp salt to taste water 1:2 cups

in a cooker put oil add cloves,cinnamon, cardamom,bay leaf fry for a second add onions greenchilly fry till golden brown then add tomatoes, ginger garlic paste fry till cookedthen add vegs, dry pds,soyas,pour water see that little oil floats on it. then add rice pressure cook it.serve hot with some raitha.

ARMENIAN CHICKEN WITH RICE

RICE WITH CURRANTS:
1 tbsp. oil
1 c. uncooked white rice
1 sm. onion, sliced
1 clove garlic
1/2 c. dried currants or raisins
1 (10 1/2 oz.) can chicken broth plus water to equal 2 c.
juice of one lemon
CUMIN CHICKEN:
1 frying chicken (3 lbs.), cut into pieces
1/2 c. flour
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. ground cumin
1/2 tsp. Garlic powder
1/2 tsp. Onion powder
1/4 tsp. Cayenne pepper

1 to 2 tbsp. oil
Heat oil in a skillet. Brown rice with onion and garlic. Transfer to a 9 x 13 inch baking dish and add chicken broth, water, lemon juice and the currants; stir to mix.

Remove visible fat from chicken and at least half of the loose skin. Shake chicken in a bag with flour, salt, pepper, cumin, garlic and onion powder, and cayenne. Heat oil in a skillet and brown chicken pieces. Place chicken on top of rice. Cover, and bake in a 350 degree oven for 1 hour.

Stir fry veggies over brown rice! I also saute some of those Quorn tenders and toss those in.
