I've already planned the expensive stuff... caviar, crab, artichoke & mushroom goodies but now I need some tasty "fillers " to extend the menu. I know you have 'em & they've been in your family for years, right? Bring 'em on!!! Thanx!

Yeah, part of my menu includes cru' de tet (raw vegies) & a grand fruit platter, both with their own gourmet specialty dips & sauces. There's some good ones already but let's keep diggin', otay?

Here are some of my favorites! Enjoy!

EASY CREAM CHEESE & JAM TURNOVERS

1 can refrigerated crescent rolls
cream cheese
jam, your choice of flavor

Preheat oven to 350 degrees F. Open the can of crescent rolls, unroll each one to form triangles. Place the triangles on an greased cookie sheet. Place 1 T. each of cream cheese & jam in the middle of HALF of the triangles. Top each one with the rest of the triangles, pinching the seams together to seal them. Bake for 15 minutes, until golden brown. Instant turnovers! Tip: you may want to brush a bit of melted butter on each one before baking.

SAUSAGE BALLS

3 c. Bisquick
1 lb. sausage
2 c. cheese, shredded

Preheat oven to 350 degrees F. Mix all the ingredients together, roll into 1” balls, & bake for 15 minutes. They are s-o-o-o yummy!

APPLE DIP

8 oz. pkg. cream cheese, softened
1/3 c. brown sugar, firmly packed
1/4 c. granulated sugar
1 tsp. vanilla
1 c. almond toffee bits
apple wedges
Sprite pop

Combine cream cheese & brown sugar, mixing well; let stand for 15 minutes. Stir in sugar, vanilla, & almond toffee bits. Cover & chill up to 8 hours. Serve dip with apple wedges. Dip apple in Sprite to keep from browning.

HOT CHEESE DIP – RESTAURANT STYLE

1 lb. pkg. Velveeta cheese
2 c. mayonnaise
3 or 4 jalapeno peppers, seed & chop
2 green onions, chopped

Place cheese in a saucepan, stirring often, over low heat. When slightly melted add other ingredients. When completely melted serve with your favorite chips.
Easier method: use microwave.

HOT CHEESEY SPINACH DIP

2 T. butter
1/4 c. onion, chopped
2 cloves (1 tsp.) garlic, minced
1 T. all-purpose flour
1 3/4 c. half & half
18 oz. frozen chopped spinach, thawed, well drained
1 c shredded Cheddar cheese
1 pkg. (1 oz) dry vegetable soup mix
1/4 c. Parmesan cheese, shredded
8oz. can sliced water chestnuts, drained

Preheat over to 425 degrees F. Melt butter in a large saucepan over medium heat. Add onion & garlic; cook & stir until onion is crisp-tender & garlic is fragrant, 2-3 minutes. Stir in flour; cook & stir an additional minute. Add half-and-half & cook, stirring constantly, until mixture boils & thickens, about 2 minutes. Remove saucepan from heat. Stir in chopped spinach, water chestnuts, Cheddar & vegetable soup mix. Spoon dip into a 1-qt. casserole or gratin dish. Sprinkle with Parmesan. Bake dip until it is bubbly & cheese is melted, 10-15 minutes. Serve warm, & enjoy! Makes 8 servings.

QUICK & TASTY CHILI CHEESE DIP

8oz. cream cheese, softened
1 or 2 cans chili (no beans)
2 cups shredded cheddar cheese

In a glass baking dish spread softened cream cheese evenly over the bottom. Pour chili over cream cheese spread evenly. Pour cheddar cheese over the top & spread evenly. Microwave for 5-8 min or until cheese is completely melted.
Let stand for 5 min. & serve with tortilla chips. Takes 10 minutes prep time.

SALSA DIP

1 lb. cheese, cubed
8oz. jar picante sauce or salsa

Heat both ingredients till cheese is melted.

ULTIMATE 7-LAYER DIP

1 can (16 oz.) refried beans
1 T. taco seasoning mix
1 c. sour cream
1 c. thick 'n chunky salsa
1 c. lettuce, shredded
1 c. Mexican style shredded cheese
1/2 c. green onions, sliced
2 T. ripe olives, pitted & sliced
chips or crackers

Mix beans & taco seasoning mix. Spread onto bottom of 9” pie plate or quiche dish. Layer all remaining ingredients except chips over bean mixture; cover. Refrigerate several hours or until chilled. Serve with chips.

EASY CHEESY CHILI DIP

8-oz. Philadelphia Cream Cheese
1 can (10.5 oz.) chili
1/2 c. cheddar cheese, shredded
2 T. chopped cilantro
chips or crackers

Spread cream cheese onto bottom of microwaveable pie plate; top with chili & cheddar cheese. Microwave on high 45 seconds to 1 minute or until cheddar cheese is melted. Sprinkle with cilantro. Serve with chips. Makes 24 serving (2 T. spread & 15 chips each.)

BACON-WRAPPED SMOKIES

1 lb. bacon
1 pkg. Little Smokies
brown sugar

Preheat oven to 350 degrees F. Cut the slices of bacon into thirds, wrap around a Smokie, secure using toothpick, or place several of the bacon-wrapped Smokies on a skewer. However you chose to do them place them in a shallow pan, then sprinkle with brown sugar. Then bake until the bacon is fully cooked.

CINNAMON & SUGAR WEDGES

1/2 c. butter, melted
sugar & cinnamon mixture, to taste
flour tortillas, cut into wedges

Dip tortilla wedges into the melted butter. Place on cookie sheet & sprinkle with cinnamon & sugar mixture. Bake at 350º, for 8 to 10 minutes, until crisp. Great eaten hot or at room temperature.

QUICK ‘N CHEESY COCKTAIL PINWHEELS

8-oz. can “any brand” refrigerated crescent dinner rolls
3-oz. pkg. cream cheese, softened
2 T. onion, finely chopped
1 tsp. milk
5 slices bacon, crisply cooked, drained & crumbled
1 T. grated Parmesan cheese

Heat oven to 375°. Separate dough into 4 rectangles; firmly press perforations to seal. In small bowl, combine cream cheese, onion & milk; beat until well blended. Spread about 2 T. cream cheese mixture evenly over each rectangle. Sprinkle each with bacon. Roll up, starting at longest side; pinch edges to seal. Cut each roll into 8 slices. Place on ungreased cookie sheet. Sprinkle with cheese. Bake for 12 to 15 minutes or until golden brown. Serve warm. Store in refrigerator.

These are the best:

1/2 cup freshly grated Parmesan cheese
6 to 8 tablespoons mayonnaise
24 slices cocktail-size rye bread OR baguette slices
In a small bowl, stir together onions, cheese and 6 tablespoons of the mayonnaise until well blended. If needed, add more mayonnaise to give mixture a firm spreading consistency.
Place bread in single layer on a baking sheet; broil 4 to 6-inches below heat source until golden brown.
Turn slices over and spread with cheese mixture.
Return to oven and roil until bubbly and lightly browned, about 3 minutes.
Makes 2 dozen appetizers

A couple of my favorites are things like:
1. a beautiful array of veggies with dip, carrots, cukes, cauliflower, broccoli, etc Fill half of a green or red pepper with ranch dip or fill a nice whole one after cutting the top of and pulling out the inside membrane.
2. take those ham slices (99%) fat free, real ham, blot off the moisture and spred cream cheese on each slice and put a long thin sliver of a dill pickle in. Roll it up, make slices, toothpick them if needed. Yummy, and you can make-- oh so many of these, and they are inexpensive! Pretty too. People love these.
3. Meatballs and a dip. 2 lbs give me 50 meatballs. Dip is grape jelly and chili sauce mixed up and heated. Also a hit with guests!

Cut the tops off whole jalapenos and empty out the seeds. Stuff them full of cream cheese and wrap them with a slice of bacon cut in half longways. Then bake them at 375 for about 35 minutes or until the bacon is cooked a little crispy and the peppers are soft. Yummy and easy! :)

..or fruit tray (strawberries, kiwis, etc) sliced and served with fruit dip - cool whip, cream cheese and your favorite jam mixed together.

sharp cheddar and apple slices with yummy crackers

ooo... or, take block of cream cheese, spread it on a small serving type plate and top it with a jar of chili sauce (in the little round jar) and a package of salad shrimp. Serve with wheat crackers. Sounds kinda weird, but everyone always devours it!

Brie - slice off the white just from the top of the Brie, place on a plate with an edge that is a bit higher than the main surface of the plate, top the brie with freshly chopped pecans (I like them raw or toasted on top of the stove - either way is delicious), sprinkle LIGHTLY with brown sugar and then gently pour Kaluha over the top so that it is overflowing and surrounding the outside of the Brie as well. Then Microwave til Brie is softened - not melted, but soft enough to kinda spread easily. Serve with Crackers of your choice (I usually go for a fancy Breton or the like). This is delicious and ridiculously simple and quick. People RAVE over this every time I serve it.

II like taking that Imitation crab meat, mixing it with cream cheese. Making balls out of it, Rolling in Italian bread crumbs and then dropping them in hot grease. The mixture itself doesn't have to be a brain teaser. Mix till you like the way it looks and if it makes balls. Can use canned tuna also. Cal dip in egg before the bread crumbs too, I like it both ways

Maybe even some Fried Rice, Very easy to make and always a good filler. You can use any type of rice. Just make it way before you want to use it. I use a 4qt pan, I chop up about 6 pieces of garlic and one small to medium onion. Add a lil olive oil, or veggie, w/e ya got, Throw the garlic in, cook it on medium high heat stirring it till it just changes color, then add onions and cook them till almost clear. Now you can add any kind of meat you want here, Shrimp, Beef, chicken, but make sure its cut into small pieces. And you dont really even have to add meat iffen ya dont wanna. Cook till meat is done or till onins are clear. Add about an ounce of soy sauce and heres where I never measure, I add a little bit of Fish Sauce, Mix it all good, Then add the rice on top and keep strirring in the rice till its all a uniform color. ohhhhhhhhhhh I got a good recipe for Traditional Mhong Springrolls too lol. But they take a lot longer and I'm too tired to keep typing.

PS Excuse my words like wanna and iffen. 30 years in texas and 10 years on the internet has done that to me

budget? get all ingredients at ALDI'S
they have a bbq shredded pork (or chicken also), garlic bread, and shredded cheese--I call this "Hillbilly Pizza" slice the garlic bread into 1/4's spread the bbq pork on it sprinkle cheez on top
bake for 5 or 10 minutes til cheez melts. Short -sweet--simple and cheap-but delish.

Quick and fast -
1. Open a can of Tomato & Onion Tuna and put on crackers
2. Open a can of smoked oysters put on crackers spread with cream cheese
3. Open a jar of antipasto and put on crackers
4. Cut cheddar cheese put on plate with slices of garlic sausage, olives and celery sticks

you always need a cheese platter with a soft hard and blue cheese, also try different kind of breads, greater harvest (i think that is the name) or panera have amazing bread bread is a good filler as well.
