recipes.com or foodnetwork.com or just google vegetarian recipes. here's a quick and easy one (one of my favs):
Black bean salad: mix a can of black beans with chopped avocado, tomato, scallion, cheese of your choice (if you're not vegan), a can of corn, and season with salt and pepper and fresh lime juice. You can also add any additional vegs you like and serve on rice, lettuce, or dip with tortilla chips. Perfect lunch and healthy.
