Melt some butter, toss in a few almond slivers, and saute. Pour over steamed green beans and garnish w/ a pinch of kosher salt. This works w/ pecans as well (chop).
A Tbsp. of Itlaian dressing or vinaigrette added to a pot of green beans gives an incredible flavor. And couldn't be simpler!
I like dill w/ green beans. A little goes a long way. Maybe a tsp. for a whole pot.

I will usually fry up some bacon and let the strips drain on some paper towels. Discard the grease except about 1 teaspoon or less and add some butter to the pan. Saute up some chopped onion & the green beans ( I prefer french-style). Also, add the bacon, but make sure to chop it up into little pieces before adding. You can either eat them like this or add some tabasco sauce. That's how I like them.

Beans Akiko.
Cook beans in a little water with a little margarine or butter. Let the water evaporate when the beans are nearly cooked and add some sesame seeds (might need extra marg/butter). Add a little soy sauce to finish.
I call this beans Akiko after a Japanese exchange student taught it to me.

Melted butter or margarine garlic powder and toasted almonds is good. Buy regular almonds and toast a handful in a pan on the stovetop. Melt the butter or margarine and stir in a little bit of garlic powder. Pour over cooked green beans and top with almonds.
Also, melted butter or margarine and some dried dill.

Cook them in some veggie broth and spice them with thyme, black pepper, and just a dash of oregano.
If you're not a vegetarian, cook them with a ham hock, or beef broth and bacon! YUM!! Then add the above herbs.

Our family loves sweet and sour green beans with fried bacon. Make your bacon so it's nice and crispy, then add it to your green beans. Add one teaspoon vinegar and one teaspoon sugar to your green beans and bacon and mix well. Continue to let simmer. Taste test... you might actually prefer a bit more vinegar and sugar... just keep the ingredients equal in measure.

I like thyme and butter or dill butter on green beans.
If you get fresh, organic beans and cook them the day you buy therm, they shouldn't need covering up.
If you get old stringy ones, cut them up and just cover wtih cheese sauce!
