How to get crispy,non oily,tasty potato chips?

Potato Chips


3 large - Baking potatoes, peeled or unpeeled
Peanut oil or any others but I 'd like this one
Salt

If using unpeeled potatoes, scrub and rinse.
Slice crosswise with a vegetable peeler, knife, etc...to make as thin as possible.

Soak slices in salted cold water, in freezer with ice cubes for 1 hour.
Drain slices and pat dry with paper towels.

Meanwhile, put oil in a deep pan, skillet or fryer; heat to 375 degrees.
Fry a few slices at a time, about 4 to 5 minutes, until golden color.
Drain on a paper towel.

Salt just before serving.

Despite what everybody else seems to say, I don't think that potato chips are fried. I think they are BAKED instead. It could be a 300 degree temperature - but don't hold me on that. I do know that potato chips were first made in colonial times. So it shouldn't be too hard to replicate them in the kitchen today.

Wash and dry the potatoes then remove the skin. Slice using a potato slicer and soak in salt water for 5 mins. Remove from salt water, drain well and immerse in hot oil and fry till golden brown.

peel potato. and "grate" the potato on the cheese slice side of your grater. thin slices will come out. toss in olive oil and then layer them on a cookie sheet. (no over lapping)bake at 350 until they are nice and crispy.

use peanut oil.slice you potatoes thin as you can, have your grease HOT!!! You have to fry fast. Dry your potato slices before dropping them in the grease/ Drain on paper towels or news paper or coffee filters and if a last resort..toliet paper. Good luck

slice the slight boiled potatos, in salty water. ( add the reqd taste makers in the water ) keep for half an hour. Then soak with dry cloth and fry.

Deep fry them twice. Fry them once for less than a minute. Let them cool and get the oil back up to temp. Fry them again until done to taste.

slice them thin and lightly spray them with cooking oil, season them as you would like (lightly salted or whatever) and put them on a cookie sheet in the oven until golden... Fry's are good that way too... I don't deep-fry anymore... good luck
