it depends on what u like each has its own unique flavor and they both are great but in stirChap Chye - Stir Fried Mixture
Ingredients
250 g fillet of beef
1 tsp sugar
1 tbsp soy sauce
2 tsp finely chopped spring onoin
1 tsp finely chopped gralic
1 tsp ground sesame seeds
1/4 tsp. ground black pepper
1 tbsp sesame oil
125 g white chinese cabbage cut into thin strips
125 g bamboo shoots, finely sliced
125 g carrots cut into matchstick strips
125 g onions, finely sliced
2 cucumbers, finely sliced
one bunch spinach cooked and shredded
omlette strips
60 g cellophane noodles
soy sauce, sugar, salt, pepper o taste
1/4 tsp msg
Preparation
Cut beef into paper thin strips and put in a bowl with the next seven ingredients
Set aside for 30 mins. while preparing vegetables.
Soak noodles in hot water for 20 mins., then drain and cut in 7 - 10 cm lengths
Stir fry all ingredients separately until just cooked.
Mix together on a large plate
Season to taste with soy, sugar, salt, pepper and add msg
Serve very hot

That depends entirely on preference. Teriyaki is based on Soy Sauce of course, so it depends on what flavor you wish. I personally prefer Teriyaki, as this goes exceptionally well with the water chestnuts I enjoy using.
(BTW, to make your own Teriyaki mix Soy Sauce with Pineapple juice, add a bit of Brown Sugar, a hint of Ginger, and Garlic to taste, thicken with Corn Starch)

you don't have to use soy sauce but what type of soy sauce have you tried as some of the cheaper ones are disgusting and not fit even for the bin and if after trying the better ones you still do not like soy sauce no big as you can use oyster sauce hoi sin or black bean sauces instead as for olive oil no do not use this in stir fry as it is the wrong oil and you can not substitute soy sauce with olive oil
