It can give you cramps and bloody diarrhea, and in worst cases it can lead to kidney failure and death. E. Coli lives in the intestines of cattle, so maybe the spinach was contaminated with manure. It's usually found in meat products though. They haven't tracked down the cause yet - read this news story for more info:

E-coli is a serious, potentially fatal infection. E-coli is found in manure, which, when spread as fertilizer, can contaminate food. It can also be spread by improper handling, when food processors don't wash their hands.

BTW, it is E. Coli and spinach!

Well, spinach grows in the earth which may have animal feces in it...
