Ingredients:
2 pounds of potatoes
1 cup of milk
6 tablespoons of butter
Salt and pepper

PREP WORK:
Start a large pot of water boiling. You want to add just enough water to cover all the potatoes. Peel and quarter the spuds and you are ready to make great mashed potatoes at home.

1. Add some salt to the boiling water and cook until the potatoes are tender. (About 15 minutes)

2. Drain the potatoes and mash by your method of choice. (I prefer a potato ricer)

3. Blend in butter and milk.

4. Season with salt and pepper

to make mashed potatoes peel the number of potatoes you want. If it's for most people about 1 1/2-2 potatoes per person is enough. Cut them into cubes and boil them until they are soft enough to stick a fork through easily. Then pour in about 1/3 cup milk or soy milk. You can also add 1 tablespoon of butter or margarine, but that's optional. Then mash with a potatoe masher or blend with a hand blender. When you have no lumps you are done. If they seem dry you can add more milk, but be careful because it's easy to overdo it.

Buttermilk Basil Garlic Mashed Potatoes

3 1/2 pounds baking potatoes, peeled and cut into 1-inch cubes
1 onion, chopped
3 stalks celery, cut in half
12 cloves garlic, peeled
1/2 teaspoon salt
3/4 cup cottage cheese
1/2 cup buttermilk
2 to 4 tablespoons chopped fresh basil
1 teaspoon salt
1/4 teaspoon black pepper

Cook potatoes, onion, celery, garlic and salt until potatoes are tender.
Remove and discard celery. Mash potatoes. Blend cottage cheese and milk together
until smooth. Add to the potatoes along with remaining ingredients, mixing until
smooth. Reheat over very low heat.
Serves 8.

MOMS SPECIAL MASHED POTATOES

8-10 medium size red potatoes
2 tablespoons butter
2 tablespoons mayonnaise
1/3 cup milk (about)
1/4 teaspoon garlic salt
salt and pepper, to taste

Wash potatoes. Cut, unpeeled and boil until tender.
With an electric mixer on medium speed, mash potatoes. Do not overbeat. Add ingredients, beating until creamy. Add more milk if needed to get the correct consistency

I boil potatoes until they are soft all the way through (according to the fork test) and then peel them and empty the pot of water. Put the potatoes back in the pot once they are peeled and combine the other ingredients over a low heat.

We combine with butter, salt, chives or scallions and sour cream and they come out amazing. You could use rice milk maybe as a substitute to make it vegan, but add only a little at a time until you get the right consistency.

I find it easier and faster to cook the potatoes if you peel them and cut them in cubes. Then salt the water and put potatoes in pot of water. Check with fork to see if tender and cooked. After that pour them into a coriander to drain water or you can save water for soup later (soup stock).

Then season with salt, pepper, butter (optional), chives, green onions, cream, milk, etc. whatever fits your fancy. You can also mix other vegetables (califlower, turnips, squash, yam) with your mash potatoe dish.

Mash potatoe recipes are endless from people of all culture. So have fun making it and licking it. Smack!

1)Get red potatoes (not the kind you bake), and cut them into about 1/4 to 1/2 inch cubes. *(You can leave the skin on or peel them, your preference.)
2)Put them in a pot, and cover with water. *(Add about 1/4 tsp salt to water if you want.)
3) Bring them to a boil, and then reduce the heat until they are simmering.
4)Cover and cook for about 10-15 minutes. Stir very gently a couple of times while they are cooking.
5)To see if they are cooked thoughroughly, remove 1 of the cubes, and check to see if it is fairly soft all the way through. If not, keep cooking until they are.
6)Carefully strain out excess water.
7)Add butter and milk *(about 2 tablespoons of butter, and 1/4cup of milk to start out, but you can add more if needed)
8)Using one of those masher thingies, start smashing until the potatoes are as smooth as you prefer them to be. *(if you don't have a smasher thingy, you can use beaters but only on the lowest speed.)
***DO NOT use a food processor, because you will end up with some kind of glue from Gilligan's Island.***
If you are vegan, you can use yukon gold potatoes and skip the butter, and use soy milk instead of regular milk.

You have plenty of advice on how to cook and mash the taters. The only thing I want to add is:
HEAT UP the milk before you add to the potatoes. It helps keep them from getting lumpy. Put a mug of milk in the microwave for about 45 sec. to 1 minute, or simmer slowly in a small saucepan on the stovetop.
