I'm looking for fresh flour tortillas or burrito wraps without all the preservatives that are in supermarket brand versions.

You can order them online from the Albuquerque tortilla factory. They're the best!!

Make your own:

First, if you have a cast iron skillet or and pancake pan anything flat..can even use a cast iron skillet if you want. Heat it on medium while you prepare your flour mixture. So it will be nice and HOT when you're ready to use it.

Flour Tortillas:

If you buy one small bag of flour use only about 1/2 the bag and pour flour into a mixing bowl.

Add 1/2 tsp. of baking powder ( I measure diagonally and a little heaping but not too heaping)

Next, add about 3 or 4 dollops of margarine (shortening dries it out too much)

Add salt too taste not too much (I just get some with my finger tips and sprinkle it around the flour)

Next: A little lukewarm water or you can use lukewarm milk makes it taste better.

As you gently mix with one hand gently pour the water or milk (use only one or the other)

Keep mixing until the dough feels moist and comes together; should form a small to medium sized ball.

I place on table top where I mixed it or counter and cover it with the bowl for a few minutes. Then put it back in the bowl and cover it for about 20min so it can rise.

Next: form little to medium sized (not really balls) but you kind of tuck in the sides and keep turning it around between both hands using your finger tips. Place these aside and then when all are formed or if you have enough to make a few tortillas go ahead and put the remaining dough in the bowl and cover the bowl with a moist kitchen towel.

Sprinkle a little flour on the surface you will use to roll out your tortillas. You can use a rolling pin but a small one about the size of your hand is best.

Place one of the round ball type things you made with your fingers on the surface with the flour but don't use too much you don't want it to dry out your tortilla. If your tortilla is cracking then you are using too much flour on the surface or your mixture isn't moist enough..okay.

Roll it out by rolling back first and then picking up your rolling pin and rolling forward. Get a certain rythmn going and you will get the hang of it.

Just roll backwards; then lift your tortilla and turn it about a quarter turn to the left, and roll forward. After each roll, as it hits the counter roll it backwards again then lift and do 1/4 turn and roll forward.

Do this over and over until you reach the desired size. Don't roll too thin; if you want larger tortillas make your little finger balls a little bigger then they will roll out larger..okay.

Pour just a tiny bit of oil into a very small dish or bowl then: Using a little napkin or paper towel wad it up and dip into the oil and spread around the HOT skillet before placing each tortilla into the HOT skillet.

This will also help your tortilla stay moist. These will cook very fast as the skillet should be very HOT by now.

Just repeat each process of sprinkling flour onto surface where you're rolling out your tortilla and remember just a very tiny sprinkle for the surface of counter or table top and tiny dip into the oil for the skillet. OKAY.

Keep going until all your tortillas are done. Stack them on top of each other to keep them hot and moist. Then wrap them in a kitchen towel so they keep warm and moist.

If they are not perfectly round don't worry about it you will get the hang of it eventually.
