Any number of steamed veggies. (The vegetable/carborhydrate combination is also supposed to be easier to digest than protein/carb).
I really like what I call "Where's the Beef Broccoli" so named from a beef and broccoli dish at a favorite Chinese restaurant that I adapted for my vegetarian husband.
Sautee some chopped onions (red or white; I use both for color) and garlic cloves in a bit of olive oil under soft; add sliced mushrooms and continue cooking until tender. In a separate pan, lightly steam broccoli flowerets until tender (but NOT mushy).
Toss all the veggies together with a generous helping of Tamari soy sauce (available at health food stores and much tastier than the sticky sugary stuff sold in supermarkets) and serve over rice.
You can make a thicker gravy by following the traditional white sauce recipe: melt 2 Tablespoons butter, blend in 2 Tablespoons of (wholewheat) flour, add 1 and a half - 2 cups liquid (veggie stock is tastiest or milk or just plain water) and slowly cook down over low heat until thickened. Combine with steamed and sauteed veggies and serve with rice.
It takes longer to cut up the vegetables than it does to cook them. If you start your rice first everything should be ready at about the same time.

Black Bean Tofu with Broccoli
Just cut your tofu into small cubes, fry it in some peanut oil.
Remove most of the oil from the pan and add steamed broccoli.
Stir-fry for a minute and then add a heaping Tbsp of black bean sauce. Heat through - add a little soy sauce to think out sauce if too thick.
Serve over brown rice and enjoy!!

Get some morning star farm's 'chicken' meal starters.
Get some frozen stir fry vegetables (trader joe's are the best)
Get some veggie teriyaki sauce (trader joe's again)
Wok the 'chicken' to thaw it. Remove and set on a paper towel
Stir fry veggies in small amount of oil until thawed
Add 'chicken'
Add teriyaki sauce
Serve over brown rice

STUFFED SQUASH WITH BULGUR AND FETA
This vegetarian dish can be prepared up to a day ahead; fill the squash halves with the cooked bulgur mixture, then refrigerate, covered, until ready to bake.
4 large summer squash (about 8 ounces each)
2 tablespoons olive oil
1 small onion, finely chopped
1/2 cup sliced almonds
Coarse salt and ground pepper
3/4 cup bulgur wheat
8 ounces feta cheese, crumbled
lemon wedges, for serving
1. Preheat oven to 400°F. Halve each squash lengthwise; slice off a sliver of skin from each half so they sit flat. Scoop out flesh with a small spoon or melon-baller, leaving a 1/4-inch border; chop finely, and reserve. Place squash halves on a rimmed baking sheet, skin sides down; set aside.
2. Heat the oil in a large skillet over medium-high heat. Add reserved chopped squash, onion, almonds, 1 teaspoon salt, and 1/4 teaspoon pepper. Cook, stirring frequently, until mixture is dry, 5 to 7 minutes.
3. Add bulgur and 2 cups water; simmer over medium heat until liquid is absorbed, 10 to 12 minutes (bulgur should still be slightly crunchy). Remove from heat; stir in feta.
4. Mound bulgur mixture in reserved squash halves. Bake until squash is tender, 25 to 30 minutes. Serve with lemon wedges.
Note: Once the flesh has been removed from the squash halves, it is chopped and added to the filling so nothing is wasted.

Last night I had some packaged stir-fry veggies and Quorn tenders. I threw them in a pan with some teriyaki sauce, stir fried them quick and served over brown rice. Yum!

Stir fry and yogurt salad.
Try making a stir fry of available veggies, a little soy sauce and olive oil. For the salad, chop up some tomatoes, onions, and carrots if you like. Add to the plain yogurt, add salt and your salad is ready.

I do zucchini in the microwave --chopped with a little water covered in a bowl for like 4 min. and then topped after with soy sauce. . . or sesame oil instead. . . and some sea salt.

Black beans and salsa. Heat up the beans and pour over rice. Top with cheese (if you use it or the veggie version) and sour cream (again--if you use it) and salsa. That is it! Quick, easy and filling, not to mention YUMMY!
