Best way to tell is by the smell...The sweeter and more fragrant a pineapple is the riper it is.

When fully grown, pineapples are ripe,and they won't ripen any further after they have been harvested.The Golden variety is usually sweetest,at room temperature they will smell sweet and have a strong pineapple scent. An old school method was to pull on the leaves of the pineapple,if they pulled out easily,it was ripe.This method is not a true indication of ripeness.

Feel and smell for ripeness. It should have some give to it when you squeeze it, but not too much. You should also have a defined sweet pineapple scent to it.
If you buy your pineapple on the mainland, wait 4-6 days before you slice it. Pineapples shipped to the mainland are ussually picked when they are a little under ripe. Though it won't ripen anymore, it will condense it's sugars on their way to fermentation.

A pineapple is ripe when you can easily pull out the green leaves sticking out of the top. Also, I found out, that once picked pineapples do not ripen any more...they just start going bad.

Pull a "leaf" from the middle of the plant top. If it comes out easily, it's ripe.

Its ripe when the green leaves are pulled out easily... if theyr'e tough to pull out, its not ripe.

it ussually smells like pine. Sometimes you can tell by puling it off the tree and breaking it open. If its ripe eat it. If not, put it back on the tree.

it has a little give when you push on it with your thumb, and you can smell pineapple at the base...
