Artichoke Squares
Serves 6 (4 per serving)

2 (6 oz cans) Artichoke Hearts
2 Tbsp Fresh Parsley, chopped
1 White Onion, Minced
1/4 Tsp Salt
1 Cup Eggbeaters
1/4 Tsp Pepper
8 oz Mozzarella Cheese, shredded
1/4 CupItalian Style Dried Bread Crumbs
3 Seconds Nonstick Cooking Spray

Instructions:
Preheat the oven to 325ºF

Drain the liquid from 1 jar of artichokes into 1-quart saucepan. Drain liquid from second jar of artichokes and discard. Finely chop all artichokes; set aside.

Coat a 12x8 inch baking dish with nonstick cooking spray. In the artichoke liquid, over medium heat, cook minced onion until tender.

In a medium bowl add eggs, cooked onion and chopped artichokes, cheese, bread crumbs, parsley, salt and pepper. Spread mixture evenly in baking dish.

Bake for 30-35 minutes until set and lightly browned. Allow to cool for 15 minutes in dish on wire rack.

With knife, cut lengthwise into 4 strips then cut each strip crosswise into 6 pieces. Arrange appetizer on platter and serve.

Cucumber Salsa
Serves 6 (Makes 3 Cups)

1 Cup Sour Cream
1 Cup Plain Yogurt
1/4 Cup Parsley, snipped
1/4 Cup Cilantro, snipped
1 Tsp Ground Cumin
1/2 Tsp Salt
2 Medium Cucumbers, peeled, seeded, diced

Instructions:
In a large bowl, combine all of the ingredients and mix until well blended.

Cover and refrigerate until chilled, about 2 hours.

Serve with assorted vegetable dippers.

Salmon Rollups
Serves 4 (2 per serving)

8 oz Smoked Salmon, drained, flaked
1 Egg, beaten
1 Tsp Dried Parsley, crushed
1 Tsp Minced Onion
1/2 Tsp Dill Weed
1 (8 oz can) Crescent Rolls
1 Tsp Cayenne Pepper
1 Cup Mild Salsa

Instructions:
Preheat the oven to 350ºF

Mix salmon, egg, parsley, onion and dill weed and spread on rolls. Roll up from wide end after spreading.

Bake on cookie sheet for 12-15 minutes. Serve with salsa.

Jalopena sliced in half (remove the seeds)
cream cheese (garlic and herb)
bacon

place Jalopena on a baking sheet, spoon in cream cheese, wrap bacon over jalopena. preheat oven to 350 degrees cook for about 45 minutes. We love it.

I have a ton of recipes for appetizers. Here are a few of my favorites:

Artichoke Dip Squares

1 C mozzarella cheese
1 C mayonnaise
1 C parmesan cheese (grated)
1 can artichokes (un-marinated)
1-2 cloves garlic, minced

You can either scoop the dip onto rye party bread and bake at 350 until it starts to get golden brown on top. OR, you can bake it in a bread bowl (rye or sourdough work best) until golden brown on top. Then you just dip with crackers. Both ways are great.



Bacon Wraparounds

1/2 C soy sauce
2 T sugar
2-5 oz. Cans water chestnuts, drained
10 slices of bacon, cut in half

Combine soy sauce & sugar and marinate water chestnuts in sauce for 30 minutes. Wrap bacon slice around each water chestnut & fasten with a wooden toothpick. Bake at 350 degrees for 30-35 minutes or microwave for 4-6 minutes until bacon is crisp. These get really hot so watch you tongue.


Bruschetta

2 large tomatoes, coarsely chopped
1/2 sweet onion, chopped
2 tablespoons olive oil
1 tablespoon chopped fresh oregano
1 teaspoon chopped fresh basil
2 teaspoons chopped fresh parsley
1/2 (1 pound) loaf Italian bread, cut into 1 inch slices
1/4 cup freshly grated/sliced Parmesan cheese

Preheat oven to 400 degrees F (200 degrees C). In a medium bowl, combine tomatoes, onion, olive oil, oregano, basil and parsley. Place bread on a baking sheet, and top with tomato mixture. Sprinkle with Parmesan. Bake in preheated oven for 8 to 10 minutes, or until bottom of bread is browned. Allow to cool 5 minutes before serving.


Rita's Roll-Ups

Flour Tortillas
Cream Cheese Spread (Chive & Onion or Vegetable)
Shaved ham or turkey
Shredded cheddar cheese
Leaf Lettuce

Spread cream cheese on tortillas. Layer a small amount of shaved ham, shredded cheese, and leaf lettuce on top of cream cheese. Roll tightly. Loosely wrap in moist papertowel and then saran wrap to keep moist. Refrigerate 2 hours and then cut into slices.
