I'm not vegan. But I am vegeterian. Being a vegeterian does limit my options to dine out. However, I love to dine out. I often come to my non-veg relatives in West Hempstead, NY, in the Nassau County of Long Island. However, when I really can't enjoy food at home with them, I like to be able to dine out with 'multi veg. options' on the menu available. But....all I see is lots of menus for 'non-veg'. And about only an eggplant parmigiana or pasta. Honestly.... I'm sick and tired of eating the same thing everytime I dine. I love spicy food (and other types.) But nothing boring or tooooo fattening... I'm willing to go international..(except I don't adapt well with the chinese menus). I don't eat Fish, Egg, or non-veg. So guys.... ladies..... the knowledgeables: Please help me in this. Do you know of any good diners with more vege. options on their menu in the Nassau County (Long Island, NY)?

The Zen Palate.
It is vegan. I am a hard core carnivore, and I can't believe what a great job they do there! I usually can't stand vegan food, but this place is on the top of my list, meat eater or not!
It is on Old Country Road by the Source Mall. The parking lot and entrance is around the back of the building.

Wow, I've been a vegan for 18 years and I don't feel it limits my opportunities to eat out at all. Of course I'm not even going to try to go to a steak house. There are excellent vegetarian dishes at Thai, Chinese, Vietnamese, Japanese, Korean, Hawaiian, and Indian restaurants.

Look for Indian or Thai restaurants. Many of them have many veg options or will make anything veg friendly if you ask.
