if u r making onion pakoras add corn flour a spoon or two depends on the qutatity u making its will saty crispy.... alsobefore closing in airtight container make sure they r not very hot else cause of moist they will get soggy... so after cool down store them in airtight containers... n in any pakoras add eating soda that will also help... enjoy today onion pakora with cornflour n see the difference

All fried stuff goes soggy after awhile, basic cooking knowlege, not much you can do about it. Certain ingredients/methods can however prolong its life, you have to find that through trail and error. However, it should go crisp again when you reheat.

They are cooked to be crispy by having a moisture content low than the air. As they are left out, they absord the additional moisture and become soggy.
This also happens to biscuits etc.
The opposite happens for bread, it is baked with more moisture than the air and therefore goes hard as it loses its moisture into the air.

it's simply the the thickness of the batter, the thinner, the crispier. But to solve that problem, just fire it back in to the fryer, they will soon crisp up again........mmm i love pakora.

They tend to soak up the water vapour from the arir. To prevent this, use a tightly closed container to hold them.

Its mainly cos they have been cooked in oil and oxygen makes them go soggy.

Fry them at the last minute. Drain them on kitchen paper. Why do you think Indian mother's either stay at home or have servants? - Or both!
