I'm holding a 1960s themed dinner party on Saturday, and I'm struggling to find a menu.
The reason is that the party is being attended by 2 diabetics, a person who can't eat fat (like cheese etc) for medical reasons, a lad who is allergic to nuts and also a vegetarian.
Does anyone have ANY idea or inspiration about what I can do that would be suitable for everyone, but won't need me to spend most of the night in the kitchen?

FTAO of the person who claimed that "no-one" can not eat fat, then this person is obviously the only one. I've known him for years. He had hepatitis as a child and there's loads of stuff that he cannot eat, like cheese, bread, pasta, certain meats, milk products etc.
This has been instructed by his consultant, so I'm certain that the experts know what they are talking about.
As for the claim that diabetes is all about sugar - it isn't. It's more to do with the intake of carbohydrate. I know this as I've been an insulin dependent diabetic for 16 years.

Oh, and the nut allergic person is definitely not a "fool" or an "idiot". I've had to inject him myself when he's collapsed.

how about:

salsa and nachos for starters or anyother non-fat dip and veggies

a light tangy vegetable soup, miestrone or veg clear soup should work

for the main course u can have a pasta dish, garlic bread and a veg pilaf. i(f u have non-veg guests too, u can have 2 kinds of pasta or cocktail sausages and pepperoni kept on the side.)

and for the dessert u can have an eggless sponge cake soaked in fruit syrup and decorated with custard (use a sugar free powder to make it) and fresh fruits. whipped cream can be kept on the side for those who arent weight concious. u can also opt for a fresh fruit platter with cream on the side if u wanna go easy.

these things are eays to prepare and u wont be stuck in the kitchen all the time making them either.

Buffet is the only way to go -- I would do a 60's taco bar. That way everyone can make up a plate with the foods they can eat!

You can have corn taco shells, some flour taco shells, Fritos (very 60's), some washed and separated lettuce leaves because some people will use no shell at all. Then separate bowls of Chopped tomatoes, shredded lettuce, cabbage, avocado, olives, different kinds of chopped onion, shredded or cubed cheese, cooked seasoned meat, jalapeno peppers, different salsas, quartered limes, sour cream (no-fat or tofutti also if you want to), and different kinds of beans - black and pinto. You can make little place card signs for each dish. Another 60's touch would be lazy susans for serving -- make sangria and have a great time!

The theme sounds fun !! What time should I be there ? ! ?
Fruit and vegetable skewers are always a hit or at least they have been at the numerous parties I have catered. You can have a fondue of course for those WHO CAN dip their fruit and veggie skewers in a cheese or a chocolate. You can even have various flavored bread cubes for those who can have the bread.

If you are going to make pan of bars with nuts in it, simply make sure you put a whole nut on top of each serving so the nut allergic person can clearly see that nuts are within the recipe. (sure you already knew that ; ) ). Enjoy your party and don't be too stressed out over the food... these people will come with it in mind that they are possibly difficult to cook for. These being good enough friends to invite for a party, will enjoy what ever you have to offer. Have a FUN one ! : )

Ok you probably don't want the extra expense but 'cooking without' by Barbara Cousins has recipes catering for everyone which are relatively simple to make. There are two versions one for vegetarians and one which contains both meat and meat free meals.

Very few recipes sites cater for a range of intolerances (trust me I've been searching as I'm both gluten and dairy free).

Maybe veg fahitas (feeds 4) ... use oregano (about 3 tablespoons), chillis (4or5 depending chilli fingers for extra spice), peppers, mushrooms, onions, garlic. Corn tortillas for gluten free, normal otherwise,

Think its 2 tbspoons olive oil or veg oil,
cook onion and garlic until lightly browned, add peppers, chillis and oregano cook for 10, add mushrooms for 1-2 mins server piping hot

Torillas heated while cooking,

Gaucomoloe, salsa, cheese, sour cream and salad extra on table. Its a good one because people make up their own fahitas so can exclude what they can't eat and don't feel embarrassed or feel like they are causing a fuss for doing so. The recipe uses mostly fresh ingredients so should be ok for nut allergy but check packets of tortillas etc just in case

You, for example, have, apparently, a friend who "can't" eat fat. That alone would be remarkable because they would be the only person in human history to have this condition. There are people who ought to watch their fat intake but no one, repeat, no one, who "can't eat fat." (If that was the case they would be dead because certain vitamins are not available to the body unless dissolved in fats)

Actual food allergies, such as an allergy to certain nuts, do occur. The total for all known types of food allergies is about 3.5% of the population although a vastly larger percent claim to have an allergy. Ask to see the epinephrine injector of the person who claims a nut allergy. If he doesn't have one he's either lying or a fool or both.

Diabetics generally need only stay away from sugary desserts or anything prepared with sugar. If they are controlling their condition with insulin little more is required. Home cooked meals which do not (as commercial foods often do) add sugar to things like soup ought not to be a problem. Cook normally and let them skip the dessert.

You can also searched based on preperation time and whether or not you can prepare in advance.

How about a make your own salad bar? You could prepare a table with lots of different salad fixings and toppings and allow everyone to make their own.

You could do the basic like lettuce, spinach, carrots, broccoli. But you could also have ham, turkey, chicken for people to add on. And do not forget to offer fat free alternatives with the dressing.

You should also let your special eaters know exatly what you are going to be offering and encourage them to let you know what they think.

You could also invite people to bring their favorite salad topping. Salads can make a lovely meal with very little work. You could also make soup to go with it. Again you could ask your special eaters for recipes. I am sure they will be more than happy to help you.

Pasta with marinara(meatballs on the side),a salad of mixed baby greens and baby spinach(dressing on the side,and a low-fat dressing as well)also add some tomatoes,red cabbage and shredded carrots to the salad for flavor and nutrition.Maybe add some nice salmon on the side as well,and for desert a simple sponge-cake with a variety of fresh fruits for toppings.

Tai Soup
various oriental veg including oyster mushrooms place in a pan with 2pts water, 2 vegtable stock cubes and mixed spice to tase. bring to boil and simmer for 30 mins

Roasted vegatables with risotto rice.
Pick your fav veg and place in the oven until crisp
Battered veg with salsa or any dip of your choice

dessert fruit salad with malibu and oj
choose your fruit and place in a bowl with 1 ltr of oj or mixed fruit juice and 1 whole wine glass of malibu. mmmmm nice

you could 24 hrs before do a vodka mellen. get a green mellon. the big ones and put a hole in the top and add vodka every now wnd then until bottle gone for a top tipple

Why not hold a "communal" supper, and ask each guest to bring a dish that they can eat and enjoy to share with others, ask them also to clearly label the ingredients of each dish so no-one eats anything they shouldn't
Meanwhile, you provide a big dish of fresh salad, with some interesting dressings, also clearly labelled, and a big bowl of fresh fruit salad, with appropriate sweeteners on the table for your guests to help themselves.
And of course lots of wine which always makes the party go well.
This way you know that each of your guests can eat at least one dish, and it will provide you with inspiration for your next dinner party.

I'm thinking stew and then for the lad you can serve him some sort of veggie cassorole that will also be an excellent side dish for the others.
I can sympathize with your frustration--it's amazing how many food allergies and diet restrictions people have these days.
