some of the spices indian use are cumin, tumeric, cadamon, safron, star anise, cloves, garlic, onions, chilli, peppercorns, curry leaves, thyme to name a few. however u might be on the wrong track. it may not be the cooking, indians use a type of strong body oilment on themself. i quite sure that the smell u miss. sorry i don't have detail, but check google or post this in BOLD attention to indians. good luck

you call it stench ? are you sure you are talking about indian food ? are you out of your mind ? indian food, while cooking, gives out very appetising aromas, what the hell pakis have to do with it ?
if at all you can not stand the smell, it's the garlic, perhaps, because it has a very strong aroma. but one should put them in hot oil, and allow to turn brown, then it smells good.
curry leaves, other masalas like cinamon, cardamom, cloves, black pepper, ginger, turmeric, red chillies, etc. should not give out any odours. watch keith floyd cooking indian dishes, and you will know in details. do not degrade a country, for lack of your knowledge, even beef, or fish, while being cooked, has a typical aroma.
check you are not suffering from jaundice or some thing, that gives an aversion to food smells ! or change your apt. ? oh, you have already, then don't worry, are you sure, you are not too hungry at present, and no food=stuffs handy ?

THey use curry ingredients such as cumin, coriander seeds, garam masala etc
However when i lived with a group of indian guys they would cook and eat things that I have never seen in any indian restaurant.
One thing was almost just like fried yoghurt!! that they would mix with their rice, it tasted very sour to me but they loved it
So im thinking to get the smell you would need to learn about indian cooking at home as apposed to the stuff we see in restaurants or as well as.

The pleasing aromas are most likely to be garlic in curries. However, I am no authority on curry, but when I make curry it is usually garlic that I smell most pungently.
