I can't cook and my fiance is coming home after being away for a long time. I want to surprise him by cooking something from his culture. I need a recipe that is very step-by-step and precise as i really can't cook and mess up the simplest of meals.

Bengali Chicken Curry
(for a serving size of 4-5)
1 chicken, cut
2 onions sliced
2 bay leaves(tej patta)
1" cinnamon
4 cloves
1 big tomato chopped
1/4 tsp turmeric
salt
chilli powder
oil



Method
Marinate the chicken in salt, turmeric, chilli powder and 2 tbsp of oil, for an hour. Heat oil in a big vessel, now add the bayleaves, cloves and cinnamon. Then add the sliced onions and fry till golden. Add the marinated chicken and fry on high heat for 2 mins. Reduce the heat, cover the vessel and cook for 5-6 mins. Now add the chopped tomato, cover again and cook till done. Garnish with cilantro.

Bengali's are perhaps the greatest food lovers in the Indian subcontinent. Rice and fish are their staple diet. Many of Bengal's famous dishes are fish based items and they consider a meal incomplete without fish. Bengalis have a special seasoning called 'Panchphoran' which includes five spices - mustard, aniseed, fenugreek seed, cumin seed and black cumin seed. The garam masala is made up of cloves, cinnamon, cumin and coriander seeds, mace, nutmeg, and big and small cardamoms. The principal medium of cooking is mustard oil.

A typical Bengali lunch or dinner will generally comprise of bhat (rice), dal (lentils), tarkari (vegetables) and macher jhol (fish curry). No description of Bengali food is complete without mentioning the famous Bengali sweets like rasogolla, sandesh, mishti doi (sweet yogurt) etc.

Fries/Bhaja
Fries or Bhaja as the Bengalies call are an important part of a midday meal. It accompanies a meal of rice and dal. Some wonderful recipes of fries to serve in a traditional Bengali feast.

Kumro Phool Bhaja
Ingredients:
20 kumro phool.
1cup besan or chick-pea flour.
1teaspoon oil.
water to make besan paste.
1/2 teaspoon posto (poppy seeds).
-1/4 teaspoon kalojeere (kalonji), 1/2 teaspoon chili powder,salt to taste, oil for deep frying, a pinch of baking soda (optional)
Steps:
Pour besan in a large bowl and add 1 teaspoon oil.
Mix thoroughly. Add water and make batter with a relatively thick consistency.
Add the posto, kalojeere and chili powder and salt and whip batter well.
Set aside for 1/2an hour.

Wash the flowers well and Remove the stigma from the center and drain off the water.
Dip the flowers in the batter and deep fry them.
Remove them until rich brown and drain extra oil on absorbed paper and serve.


Alu Bhaja
Ingredients:
-Potatoes-2 , Salt-to taste, Turmeric-a pinch, Mustard oil for frying
Steps:
Cut potatoes into 1 inch. Stripes after peeling. Rub in turmeric and salt. Deep fry till tender or crisp.

BegunBhaja
Ingredients:
Brinjal-2, Salt-to taste, Turmeric-a pinch.
Mustard oil for frying
Steps:
Cut brinjal into rounds or lengthwise. Rub in turmeric and salt. Deep fry till tender.
Beguni
Ingredients:
1 brinjal, 1cup besan or chick-pea flour. -1teaspoon oil, Water to make besan paste, 1/2 teaspoon posto (poppy seeds), 1/2 teaspoon chili powder, salt to taste. Oil for deep frying, A pinch of baking soda (optional).

Steps:

Fried Hilsa
Ingredients:
Hilsa-6 pieces, Turmeric paste-1 teaspoon
salt, oil for frying.
Steps:
Heat oil till blue haze appears. In the meantime, coat the hilsa with turmeric paste and salt to taste. Fry in hot oil until crisp and well browned. Drain off oil and serve immediately.
