The only reason NOT to stop eating meat immediately is that some (by no means all) people need to adjust gradually to the increase in beans that most vegetarians eat. To be blunt, if you switch from a meat based diet to a bean-based diet abrubtly, you may have a lot of gas for a couple of weeks. But if you switch to a diet with dairy as a chief protein source and increase your bean consumption over a period of time, that will not be a problem. That would be my advice - once you start being vegetarian, meat will no longer taste good to you, so you might as well start your healthy veggie diet right away.
If you eat dairy and/or eggs, there are no special nutritional concerns. If you are vegan, you will need to find a source of Vitamin B12, which is abundant in meat, milk, and eggs, but scarce in plants. The best source is a tiny pill that you dissolve under yout tongue.
If you eat nothing but cheeze doodles and froot loops, you will have a nutritionally inadequate diet. If you eat a variety of foods such as grains, beans (including tofu), peanut butter, fruits and vegetables, plus possibly some dairy and/or eggs, you will have a diet that is more than adequate for all your requirements. And getting rid of the meat in your diet will open up whole worlds of new possibilities - try ethnic foods from India and Thailand, where there is a strong vegetarian tradition, for example.
Soon your health will start to improve - but it takes time, just as it took years of eating meat to develop poor health. But now at least you will be heading the right direction!
