I used to make vegie bake often, but stopped for some reason and now can not remember how I did it!

Would love to get ideas from others!

Its probably not like you used to make, but its very good:

phyllo dough
butternut squash
red bell pepper
jar of artichoke hearts
leek
lg. poblano chile
mint, cilantro, paprika
plain yogurt, feta cheese.

combine the yogurt, feta, mint, cilantro, paprika. stir into all veggies, cut into 1 in. chunks (except leek diced - only the white part and rinse it good first) and them place in phyllo dough squares. Bundle up like a parcel, gathered at the top. bake until warm and cooked in the middle. you can also add cumin and curry for a new flavor.

There are a few garden bakes at the Yahoo group called The shortcut vegetarian. There is one with tomato as the main ingredient that is fantastic and another one that contains other garden veggies. I believe both have cheese and bread crumbs.

2 large cans Veg-All
12 oz. Shredded Cheese (Your favorite type)
Combine, add salt & pepper to taste
Place in casserole dish.

Top w/ 1 can of biscuits, put butter on top of biscuits.

Bake at 350 til biscuits are done.
