Ingredients
1 cup saboodana (sago)
1 cup peanut crush (coarse)
1/2 cup fresh coconut (finely grated)
5-6 green chillies finely chopped
1 med. potato, peeled & finely chopped
1/2 tsp. sugar
1 lemon, juice extracted
1 tbsp. coriander finely chopped
1/2 tsp. cumin seeds
salt to taste
1 1/2 tbsp. ghee
Method
Wash, drain and allow sago to soak.
Lightly fluff up with fingers to loosen each particle.
Add all ingredients except ghee, potato, coriander and chillies.
Mix well with hands to blend. Heat ghee in a non-stick pan.
Add potatoes, stirfry till tender. Add chillies and stir.
Add sago mixture, toss gently with a wooden spatula, till well mixed.
Cover and cook on low for 4-5 minutes, stirring frequently.
Not tossing often will result in the khichidi forming a tough layer below.
The sago is cook when transparentish.
Garnish with coriander.
Serve hot and fresh for best taste.
Making time:20 minutes (excluding soaking time)
Makes: 3 servings

Sago (Saboodana) Kheer

Serves: 1 servings
Ingredients:
1 tb Sago; (Sabudana)
2 c Milk
1 1/2 ts Elaichi; (Cardamom) Powder
Sugar - to taste
Instructions:
Wash and allow sago to fluffy up in the drained moisture.
Mix into the milk and put to boil.
Stir continuously till boiling is attained.
Cook on low till the sago is fully cooked.
Stir occasionally.
The sago should easily press flat between thumb and finger to be done.
Stir in the cardamom powder and sugar.
Boil further 2 minutes, serve hot.
Making time: 15 minutes
Makes: 1 1/2 cups
Best in: ailments like loose motions and ulcers.

put the ghee in the pan with the jeera and add the green Chile,and potato let the potato cook then lower the heat and add the saboodana and some salt and on top add crushed peanuts! Enjoy!

Saboodana Vada
Ingredients:
1 cup saboodana (sago)
1/2 cup peanuts roasted, crushed coarsely
1 potato boiled, peeled, mashed
7-8 green chillies crushed
salt to taste
oil to deep fry
Method
- Wash sago and drain excess water.
- Soak for 1 hour. Loosen and sprinkle 1/2 cup water.
- Keep aside for 2-3 hours. Loosen and remove any lumps.
- Add all ingredients except oil. Mix well.
- Make pattie shaped rounds (flattish) with moist hands.
- Deep fry in hot oil on medium flame.
-Turn once and fry other side till light brown, and crisp.
- Drain on kitchen paper or rack.
- Or, you may serve peanut chutney.
Making time: 45 minutes (excluding soaking time)
Makes: 10 vadas

Saboodana Khichidi
Ingredients: 1 cup sago dry
1 cup roasted peeled peanuts crushed or powdered.
3-4 green chillies chopped
1 potato peeled and chopped fine
2 tbsp coriander chopped
1/2 tsp cumin seeds
1/4 tsp sugar
1 1/2 tsp lime juice
1 tbsp-ghee / oil
Method:
- Wash sago gently. Remove excess water. Keep aside for 1 hour. Loosen the sago and break lumps with figures. Sprinkle a handful of water. Keep aside for 1 hour. Loosen as before.
- Take in a mixing bowl. Add the peanuts, coconut, cumin seeds, sugar, salt and lime. Mix well with hands or wooden spatula.
- Just before serving, heat oil in a non-stick sauce pan, add potatoes and stir fry till tender. Add green chillies and stir.
- Add sago mixture and stir gently till uniformly mixed. Cover and cook for 5 minutes on very low flame, frequently stir in between.
- When the sago grains become transparent and soft, add coriander and mix.
- Serve immediately, with hot tea or coffee.
Making time: 15 minutes (excl soaking time)
Serves: 4
Shelf life: best when fresh

SABOODANA
Ingrediants
Rice flour- 2cups
Sugar-1 cup( It can be reduced to 3/4 cup if one wants to reduce the sweet)
Milk-3 cups( I use HALF & HALF, it can be substituted with whole milk)
Water-1cup
Grated coconut-1/2cup
Method
1) Make a soft dough of the rice flour, grated coconut along with 1/4 cup sugar and required amount of water.
2)Shape them out to round kollukattai's
3)Bring the milk to boil along with water and remaining sugar.
4)When the milk starts boiling well add the kollukattais one by one take care not to break them.
5)Keep them in low flame till the kollukattais are cooked.

Make Sabudhana cutlet.
Soak sabudhana for 2 hours . Drain water. Keep oil in a pan . season it with salt,Zeera, green chilly, little chat masala and garam masala. then add soaked sabudhana. Keep for 5 mts in low fire with lid closed. When cooked fully, add boiled, mashed potato and one cup of bread crumbs. mix thoroughly. make flat cutlets and deep fry . Shallow fry also tastes good. Eat with tomato sauce
