It's the thick part of fillet of beef, usually weighs 12-16oz, enough for two people. Very simple to cook; because it's too thick just to grill, it's usually given a short time under the grill and then baked in a hot oven until done to your taste. See link for an example.

traditionally, the Chateaubriand is the chunk of meat at the thick end of the beef tenderloin, also known as the head of the fillet.

at home, it should be prepared (in my humble opinion) grilled no more than medium , preferably medium rare, over natural lump charcoal in a weber or weber shaped grill..

this cut is the closest bit of meat to the filet mignon, so it should not be overcooked, or it will be tough and nasty.
