i dont know which sushi you particularly liked. as sushi is often misunderstood in the western world.-refer to complete dish rice tog. w/ toppings. but in japanese language it refers to rice not the fish or other toppings.
western world misunderstood sushi to mean only clumps of rice topped with raw fish. there are many types of sushi. i dont know which side of the world are you at tihis moment and im answering your question right at this moment here in japan .at 5:00 in the afternoon. i think youre thinking about the sushi with raw fish toppings as this is very popular worldwide. i will try to teach you the nigiri sushi- a hand pressed sushi with raw fish and cooked seafood:
you need: cooked rice
rice wine vinegar for sushi making only
extremely fresh fish like tuna,salmon, squid,seabream,scale fish,
egg omelet,cooked shrimp, octopus
soy sauce ,japanese horseradish (wasabi)
pickled ginger
tips for making sushi rice:-- add vinegar mixture to the rice while still hot.. cool the rice quickly using a fan, so that it will look shiny. use a spatula to mix rice,using a cut and fold motion so that u will not smash the rice grain.

how to prepare to prepare common raw fish used for sushi
###be sure to keep your hands , sushi cutting knife and cutting board very clean before you begin!
IT IS VERY HARD but LETS TRY!
tuna (maguro)---buy a block of fresh tuna. cut it into rectangle. slice it diagonally and cut it into smaller rectangular pieces.
fresh squid----- take out the guts, head and legs. peel the skin. cut the squid open and cut the sheets into smaller rectangular pieces
fresh mackerel----take the guts out and fillet the fish. soak the slices into rice wine venigar for one hour,then wipe the fish well with paper towel,and peel the skin.slice into smaller rectngulr pieces.
sea bream and scale fishtake the head and guts out and fillet the fish .remove even the smaller bones. salt over the skin and put it on the cutting board. pour hot water over the fish .cool it in ice water immediately. dry the fish with paper towel and cut it into smaller rec.tangular pieces
shrimp and octupos------ in a pan with boiling hot water dip the shrimp for a few seconds and peel off the skin, repeat the procedure with the fresh octupos and dry it with paper towel and cut the octupus into smaller diagonlly cut pieces.

while still warm put some cooked rice into your palm and press it and there you can put some slice on the top of the cooked rice!
serve immediately served best with a soy sauce or wasabi.along with pickled ginger and green tea as a way to cleanse the palette

want the simple way of safe sushi?
since sushi is raw fish, most fish stores do not carry sushi-grade fish so this is what you can do...

- imitation crab meat (sliced thin)
- avocado (sliced thin)
- glutenous or sushi rice
- cucumber (sliced thin)
- wax paper

+ cook the rice
+ cool the rice in the fridge for 30 mins
+ wet your hands
+ lay the rice flat on the wax paper
+ lay cucumber, crab meat and avocado into a 1" layer over 1/3 the rice on one side
+ roll up the contents starting from the side with the contents
+ slide the wax paper out as you complete your first revolution in the roll

When you complete the roll, you have just made a california roll! it's safe and tastes good. if you want, look on google on "how to make sushi rolls" to learn more advanced methods.

Just a few pointers: if using raw fish, get the freshest fish possible. So fresh in fact, that it does not smell fishy at all, but more like the ocean.

Use sushi rice when making it--or a medium grain, not long

Use seasoned rice vinegar for sushi, not regular american white--which is too acidic. You don't want your rice to be mushy.

The Nori seaweed wraps are pretty inexpensive--those are the black seaweed wraps that are on the outside of sushi (unless you're making california rolls).

Avocado is great in sushi. So is julienne sliced carrot.

Don't forget your wasabi.

You may like Japanese sushi... but beware... there is the possibility of getting your brains infected with worms in the long run.... when i was in the Philippines i saw the picture of a man's brain infected with worms with a warning that if you take sushi, it will affect your brain in the long run

1) you need either really fresh fish or smoked fish - thin slices.
2) cooked rice - take a handfull and roll it between your palms.
3) wasabi - a pinch of it, between the rice and the fish.

My mom and I used to just make sashimi. We don't have to roll the rice. :)
