Stew Rhubarb with apple juice until very mushy let it cool and have as is or with a bit of yogurt very delish simple dessert and very good for U.

I love frying zucchini eggplant onions and red bellpepper in a can of diced tomatoes with a splash of soy basil and garlic optional can serve on top of pasta or shreaded cabbage yummy

1 package of low cal Jello (4 servings) any flavour you like
1 0% fat plain yogurt (sweetened)
Make the jello as usual, allow to set about an hour in the fridge (until your finger leaves a mark/hole, but the jello is not quite solid)
Add the yogourt to the jello and beat until well mixed.
Return to fridge until solid...
Another way:
2 packs of low cal jello
Low cal plain cookies or sponge fingers...
1 0% yogurt
Make 1 packet the usual way, place in a recipient big enough to hold both packets. Cover with a layer of the cookies. Allow to set (the cookies should sink somewhat into the jello...
Make the other packet as above. You could also put some choppped peaches or pears in the lower one, or spread between the two... Cut in squares when chilled, and cover with a dollop of low cal whipped cream.

Zucchini are one of the healthiest vegetables we have, and also one of those with the least amount of calories...
Here are 2 recipes

Zucchini with rice
Take 2 large zucchini squash, peel and dice.
2 onions also peeled and chopped.
1 clove of garlic mashed or finely chopped (use 2 if you like)
olive oil for the pan...
Sautée together until tender with a pinch of salt
Separately boil 1 cup of rice, once it is cooked rinse and set aside..
When the veggies are cooked, fold the rice into the vegetables little by little, stirring to mix well.
I usually fry some chopped bacon with the veggies, but for a vegetarian dish, this is evidently not needed. For an extra flavour and crunchiness you could add a handful of slivered almonds to the vegetables to brown a little 2 min. before you start adding the rice.

Cream of Zucchini Soup
3 large zucchini sqaush
1 large potato
Salt and pepper to taste, or 2 vegetable bouillion cubes
Water
soy milk (1 quart or 1 litre)
Peel and chop the zucchini and the potato, place in a good sized pot, cover with water and add the salt & pepper or bouillion cubes. Boil until very tender. Add the soy milk, allow to simmer a few minutes then place all in a blender until you have a smooth creamy soup.
For a soup with even less calories use only zucchini, add 2 more squash to replace the potato. The soup will be a bit thinner.

For a richer version, use normal milk, and add a small pot of fresh cream (this version can be eaten hot or cold like a vichyssoise).

i like to sautee onions and fresh tomatoes in Imperial margarine (light, low in fat, 0 cholesterol, tastes better than others) add some garlic powder, montreal steak seasoning, i like spicy, a dash of italian seasoning, makes a great topping to replace spaghetti sauce, over angel hair pasta or whatever pasta. you can get Barelli's black label low carb pasta for fewer calories. or good mixed with rice, beans, lentils, also works put over zucchini. zucchini romanoff is cutting the zucchini lengthwise, coring out the seeds, putting marinara, tomatoes, onions, etc, your choice, topping with some low-cal mozzerella or just parmesan, bake for 15 - 20 minutes. good veggie dishes.
i make my own version of a grilled cheese, take a flour tortilla, warm it, sprinkle on your favorite cheese, some diced tomatoes, diced avocado, fold it like an envelope, and brown in a frying pan in Imperial margarine. it gets nice and cripsy outside, cheese melted on the inside, i like to drizzle a little taco sauce on mine before folding. the margarine adds a lightly salty taste to the outside, i cut it in half to eat it. i started making those about 20 yrs ago from leftover taco fixings.
if you're not too worried about the carbs, baked potatoes are always good, i like to put broccoli and a little parmesan on them, i also like them with chili over them, healthier than chili fries. a baked potatoe and a small chili from wendy's makes a great, cheap lunch.
