I absolutely love risotto, which is an Italian rice dish that comes in a zillion varieties. It goes great with fish, chicken and pork (I prefer regular pasta with beef). I found a link very similar to the recipe I use when I make lemon risotto:

Another option is couscous. I usually cheat and buy the mixes in a box at the grocery store because they are inexpensive and really quick to fix, but I found a recipe that looks like it won't detract from your main dish:

You can also go with the standard, always absolutely delicious garlic mashed potatoes:

(That's pretty close to the recipe I use, except I use red potatoes, and I leave the skins on, because I like the way it looks.)
As for veggies, I really suggest either steamed broccoli with a little fresh lemon juice and cheddar cheese sprinkled on it, or grilled asparagus. The very easiest way to grill asparagus is to marinate it in Italian salad dressing over night (just buy the cheapest salad dressing they have on the shelf--trim and clean your asparagus--either put it in a zipper bag or in a bowl, and make sure the dressing is covering it), spray the grill lightly, and grill it for like 5 minutes. There are also a whole bunch of recipes for grilled asparagus on the recipe website where I got all the other recipes. I will let you have a look on your own.

How about Egg Noodles with a Garlic Cream Sauce?
Garlic Cream Sauce
Yield: 1 Cup
Ingredients
3 oz cream cheese, cubed
2 cloves garlic, finely chopped
1 tbsp chopped fresh chives
1 tbsp butter
1/3 cup milk
Cooking Instructions
Melt butter in 10-inch skillet over medium heat. Cook garlic in butter about 2 minutes, stirring occasionally, until softened, reduce heat to low.
Stir cream cheese and milk into garlic mixture. Cook about 1 minute, stirring constantly, until smooth and hot. Stir in chives.

I would think a homemade cranberry sauce would compliment the sweetness of the pork.It's not really a side per se, but would be simple and tasty.

mashed sweet potatoes
4 sweet potatoes cubed and boiled in sugar water
drain and mash with
2 tbsp butter, sour cream (instead of milk), 1/4 tsp garlic powder, salt and pepper
firey green beans
fresh green beans (steamed ... not too soft)
4 slices bacon chopped
2 cloves garlic crushed and chopped
1 small onion chopped fine
1/4 (or less) tsp red pepper flakes
pepper
brown chopped bacon, add onion garlic and cook till tender, add pepper flakes and black pepper toss in green beans
There is no site for you to go to...
the mashed potatoes are my own and the beans are from a restaurant I used to manage

Roasted Pumpkin, Broccoli/Cauliflower/Carrot in Cheese sauce and don't forget the roasted potatoes and then finish it off with a green salad.
