I LOVE it and its really easy.

Here is how you cook GREAT pasta:

1. Fill a pot with one quart of water per serving of pasta (1/4 pound, 100 g) you plan to make, and set it to boil.
2. When it comes to a boil, add 1 tablespoon of coarse salt (a little less if it's fine) per quart of water.
3. Check the pasta package for cooking time. No time? See below.
4. When the water comes back to a rolling boil, add the pasta and give it a good stir to separate the pieces.
5. Stir occasionally to keep the pasta pieces from sticking to each other or the pot.
6. A minute before the cooking time is up, fish out a piece of pasta and check for doneness.
7. Fresh pasta (fettuccine, tagliatelle, lasagna) cooks quickly, 3-5 minutes.
8. Thin dry pasta (spaghettini, shells, rotini) cooks in 6-9 minutes.
9. Thick walled pasta (penne, ziti, spaghetti, tortiglioni, etc.) cooks in 12-15 minutes.
10. You want an al dente, or chewy texture -- not flab. Taste, or break open a piece of pasta to test for doneness.
11. If you see a thin white line or white dot(s) in the middle of the broken piece, it's not done yet.
12. Test again, and as soon as the broken piece is a uniform translucent yellow, drain the pasta.
13. Sauce the pasta per the recipe and serve it.

Tips:

1. To better wed the pasta to the sauce, put the sauce in a broad skillet and heat it while the pasta cooks.
2. Drain the pasta when it's just shy of done and stir it into the skillet before the colander stops dripping completely.
3. Toss the pasta and sauce over high heat for a minute or two, until the pasta is done.

Just wanted to add to EmM's great instructions. Whatever you do, once the pasta is cooked, never toss the cooked pasta into a colander and run it under cold water to cool it as some would tell you. When you think about it, this step doesn't make sense. After all, it's pasta, not broccoli. Also, never add oil to the cooking water. Oil and water don't mix and it's a big waste of oil. I've never had problems with salt making my pasta tough and I think it adds flavor. Of course, you can also always add salt later in the cooking process or in the sauce.

Better to prepare the sauce either before or while you cook the pasta in a separate pan and then transfer the hot, cooked pasta into the pan with the sauce in it with a pair of tongs.

You can even use some of the salted pasta water in your sauce. Why waste it? After all, with all the extra starch from the pasta this water makes a great sauce thickener and it adds some needed salt to your dish. Just make sure that if you do decide to add this extra liquid, you adjust the sauce accordingly. Have fun and enjoy!

Chicken Pasta Alfredo
Serves 6

6 Quarts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 CupParmesan Cheese, grated

Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.

In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.

In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.

Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Here's the easiest way to cook pasta & get it right everytime. Enjoy!

PERFECT PASTA EVERYTIME

1 lb. uncooked spaghetti
1 gal. water, rolling boil

Place spaghetti into a deep pot of boiling, salted water. The salt & excess water help to prevent sticking, & allows the starch to cook off. After adding spaghetti, return the water to a rolling boil (do NOT cover with lid). Boil spaghetti for 2 MINUTES EXACTLY, then cover with lid, & remove pot from fire, let set for 5 MINUTES for el dente (firm) spaghetti. Drain, toss with oil or butter—olive oil is best. Or better yet, instead of coating with oil or butter mix in a LITTLE bit of the sauce, because adding oil may keep the sauce from sticking to the pasta.

The same can be done with any type of pasta. Just adjust cooking & standing time according to size & thickness of pasta being cooked.

NOTE: 1 lb. uncooked spaghetti equals 4 servings, or so they say!   It really depends on size of the appetite!

TIPS:
Never add salt to pasta water, because it will make the pasta tough.
When draining pasta in a colander heat the colander with hot water first, because a cold colander will make the pasta stick together.

pasta is great, boil water and add the pasta cook for 8-10 minutes for dried pasta, 4-5 for fresh pasta. the good thing about pasta is you can add anything you like to it. try penne with pesto, and parmesan cheese (real parmesan not the powdered rubbish) or try gnocchi with cream, sundried tomato and chicken. now i'm hungry.

who doesn't like pasta? just go out and buy the stuff thats already cooked and just put it in the microwave, easier that way if your not sure how to cook it.
