I love almost all of them. My favorites are mozzarella, Parmesan, Brie, Gruyere, Fontina, Cheddar, Pepper Jack, Provolone, Meunster, Romano, Bleu and Roquefort.

I work in a deli, and I have tried at least thirty different kinds of cheeses. I love fontina, onion curd, garlic curd, havarti, and just about any smoked cheese. I definitely recommend going into any deli and asking for samples, preferably Boar's Head brand. You'll love it!

Pinconning, an aged Colby type from Michigan. It's got a nice mild-to-medium flavor and is great for snacking.
I also love Stilton in small quantities. . .it's good stuff!
