Hostels in Italy are in general actually alot cheaper in the winter than the summer, In general, you will be able to find hostel private room, or budget hotel for between 15 and 25 dollars per night, per person (30-50 bucks per night total) in the larger or more popular cities - (Rome, Venice, Florence) For other places, expect to still pay at least 12 dollars or so per person. There are alot of great places to stay, I reccomend that you book your X-mas portion of your trip around now, since the holiday can fill up the smaller hostels and hotels. For example the main hostel in Venice proper is full already for most of December!
Since I do not know what city you are going to, I can not give specific advice but in general you can't go wrong with Twizi.com (they list places to stay all over the world for less than 25 dollars. They have a map of Rome and Venice hostels. There is also a city page on Florence. They have descritions of both hostels and budget hotels.
Another thing you should know is that in Italy...
Rome is called "Roma" Venice is called Venezia" and Florence is called "Firenza" (that messes up alot of people)

Private rooms usually charge by the room, not per person. Most of the ones I've seen have been in the EUR 50-60 range, especially at the bigger name hostels. I stayed in hostels in Torino and Ischia, and dorm beds were about EUR 18 per night, so you'd be looking at a fair bit more for privacy.

the way to go is a convent. We stayed in Casa IL Rosario in Rome. It was great, centrally located, near great restaurants and it was cheap and safe! we had our own room and a private bath for 75/euros per night

when i read the word HOSTEL (backpackers) i remembered the movie hostel. that was very gruesome. have u seen it? makes u think twice about backpacking in europe...
