Ainsley's Mum's Caribbean Rum Pu-Punch

I have watched my mum make this a thousand times. If you can't find canned mango pulp whiz a 400g (14 oz) can of mango pieces in the liquidizer until smooth. You can leave out the rum for a non-alcoholic punch if you wish.

Makes 2 x 1.75 litre (3 pint) jugs, enough for about 16 glasses

175g (6 oz) granulated sugar
175ml (6 fl oz) boiling water
juice of 4 limes and 4 lemons
1 teaspoon angostura bitters
400ml (14 fl oz) canned mango pulp
150ml (5 fl oz) strawberry syrup (optional)
250-300ml (8-10 fl oz) white rum (remember - more rum=more dancing)
1 litre (1 ¾ pints) tropical fruit juice
1 litre (1 ¾ pints) lemonade or sparkling mineral water
plenty of ice
quartered lime and orange slices to decorate

Stir the sugar and water together until the sugar has dissolved. Leave to go cold.
Mix the sugar syrup with the lime juice, lemon juice, angostura bitters, mango pulp, strawberry syrup (if using), and rum (if using) and stir together until well mixed. This can now be set aside and chilled until just before you are ready to serve.
Stir in the fruit juice and lemonade and serve over ice cubes, decorated with lime and orange slices.

Malibu® coconut rum
Campari® bitters
orange juice

Mix it up varying the ingredients to taste. Balance the Orange and Pineapple, add a little Malibu rum till you can slightly taste the coconut, then enough Campari to redden it and then make up the rest with rum. A delicious and authentic island drink that will make you very drunk if you aren't careful

Yeah I get one. Get a bottle of captin morgan's coconut rum, get some pineapple juice,mango and cherries to float on top, and of course ice. Get a class and put all those ingredients in it, and it's smooth
