Oxtails with Gravy

"This recipe was my mom's. It's a soul food blast from the past. I adjust spices to my personal taste (I love lots of spices). Double the gravy recipe if you like lots of gravy. My family loves this dish served with rice."

INGREDIENTS:
2 pounds beef oxtail
1 clove garlic, minced
1 onion, chopped
1 tablespoon salt
1 teaspoon pepper
1 tablespoon Greek seasoning
1 teaspoon seasoning salt
2 tablespoons bacon drippings or shortening
2 tablespoons all-purpose flour
2 cups broth from cooked oxtails
2 dashes browning sauce
salt and pepper to taste
garlic powder to taste

DIRECTIONS:
Place oxtails, garlic, onions, 1 tablespoon salt, 1 teaspoon pepper, Greek seasoning, and seasoning salt in a large stock pot. Fill with enough water to cover oxtails, and place over high heat. Bring to a boil. Cover, and reduce heat to medium. Cook for 2 1/2 to 3 hours. Remove from heat, and reserve 2 cups broth.
Warm bacon drippings in a skillet over medium heat. Stir in flour, and cook for 3 minutes, stirring constantly. Stir in broth and browning sauce. Season to taste with salt, pepper, and garlic powder. Cook, stirring constantly, until gravy thickens. Remove from heat.
Place oxtails in skillet, and stir to coat with gravy. Return to stove, and cook over medium-low heat for 5 minutes, stirring occasionally

Oxtails with Buttered Rice
Oxtails:
2 whole oxtails, sliced in 2-inch pieces
House Seasoning, recipe follows
Several dashes soy sauce
2 large yellow onions, sliced into half-moons
3 to 4 bay leaves
Buttered Rice:
2 cups uncooked rice
4 cups water
1 stick butter
Kosher salt
Preheat oven to 350 degrees F.
Trim fat from oxtails. In a broiling pan, toss oxtails with House Seasoning and soy sauce. Top with onions and bay leaves. Add water to fill pan 1/4 of the way to the top. Cover pan with foil and bake until oxtails are tender, about 2 1/2 to 4 hours. Remove foil cover from meat and brown in oven for an additional 5 to 8 minutes. Prepare rice according to package directions, adding butter and salt, to taste. Serve rice alongside ox tails.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.
Yield: 1 1/2 cups

try to get the same size of ox tails, to cook evenly, bring to a boil and then put on medium heat for at least 2 to 3 hours to make them real tender, after they are tender use some of the broth to make the gravy with [be sure to season to taste]
ask your husband if he would like them with b q sauce on the grill after pre cooking[ until tender] tastes good that way

here is oxtail jamaican style mon!
1 oxtail about 2-2.5 lb. Cut up
4 tblsp. cornflour
2 tblsp. cooking oil
Salt and Black pepper
4 rashers (slices) Bacon (Sugar cured, rindless)
2 medium onions sliced
1 clove garlic crushed
4 carrots pared and sliced
1 cup peeled chopped tomatoes
1 pint (16 fl. Oz) hot water
2 stalks green onions finely sliced
1 spring thyme
1 can butter beans (Lima beans)
METHOD:
Trim away excess fat and place oxtail in boiling water for 2 to 3 minutes to blanch.
Drain well on absorbent paper and coat with cornflour.
Sprinkle with salt and pepper.
Heat oil in heavy skillet and brown oxtail on both sides removing when brown.
Pour off excess fat.
Dice bacon and fry for a few minutes.
Return oxtail to pot with bacon, add carrots, onion, garlic, tomatoes and hot water.
Cover and simmer gently for 3.5 to 4 hours or until oxtail is almost tender.
At this stage add more liquid if necessary and season.
Cover and simmer for 20 to 30 minutes. Add the butter beans and allow to simmer for 3 to 4 minutes.
Serving for 4.
