Vermicelli = rice Vermicelli (mai fun) or you mean the one made by mung bean (bean threads)? The recipes here could be applied on any kind of noodles.
I like to have it simple, cook it in soup + meatballs or stir-fried!
<<<<<<< Meatball Vermicelli >>>>>>> (Serves 2)
Ingredients:
150g dry rice noodle (vermicelli)
12 meatballs (frozen Chinese beef / fish meatballs)
3 cups of beef stock
1 tablespoon cooking oil
fresh corriandor (finely chopped)
green onions (finely chopped)
1/2 onion (sliced)
50g soy bean sprouts
sesame oil (a few drops)
Directions:
1) Cook / boil the dry vermicelli in hot water till soft (like preparing spaghette). Drain, set aside.
2) Heat a cooking pot with medium heat, add oil and stir fry the onion for 2 minutes, pour in beef stock, bring to boil.
3) Add meatball (defrosted) into the beef stock, boil for 2 minutes, return the vermicelli into the pot, add bean sprouts and cook for 1 minute. Turn off the heat.
4) Place the corriandor, green onion, a few drops of sesame oil in the base of a large soup tureen and pour over the vermicelli, meatballs and soup. Serve immediately.
<<<<<< Fried Vermicelli with Oyster Sauce >>>>>>>>>
200 g dry Vermicelli
300 g pork or beef (shredded, marinated with 1 tablespoon soy sauce, 1/2 teaspoon salt,1 teaspoon sugar, 1 tablespoon cooking wine, 1 teaspoon corn starch for 15 to 20 minutes)
4 dried shitake (dark) mushroom (soak in warm water till soft, shredded, keep 3 tablespoon of soaking water for taste)
100 g green bean sprout (wash and drain well)
2 tablespoon of peanut oil (or cooking oil)
1 tablespoon of cooking wine / sherry
2 gloves garlic (minced)
2 slices fresh ginger (crushed)
2 tablespoon oyster sauce (mix with 1 teaspoon of cornstarch and 3 tablespoon of water)
green onion or chives (finely chopped)
1/2 teaspoon sesame oil
1) Boil the Vermicelli in a big pot with hot water till soft (like how you prepare your pasta), drain well, set aside
2) Heat oil over medium-low heat with a non-stick frying pan, add garlic and ginger to make fragrance, turn heat to medium-high, stir fry the pock or beef quickly for 1 minute, add green been sprout, sitr fry for 30 seconds, add cooking wine to make a fame
3) Add mushroom with 3 tablespoon of the mushroom soaking water into the pan, stir fry for 1 minute or till boiled, mix the oyster sauce mixture well then pour into the pan, stir quickly till the sauce thicken, put vermicelli into the sauce, mix well. Turn off the heat
4) Add a few drops of sesame oil in the pan, mix well, place the mixture on plate, garnish with green onion / chives, serve immediately

Just follow the package directions - like bring 4 qts of salted water to a boil, add noodles, bring back to a boil and reduce heat (so they don't boil over. They are done when al'dente - don't overcook ot they will get mushy. Should take about 7 mins. Drain and plate, top with your fav sauce or cheese or whatever and enjoy.

4 Coils of fideo ( coil
Vermicelli)
2 tablespoon Minced onion
1 Clove garlic -- minced
1/2 cup Canned tomato sauce
3 cup Water
Salt -- pepper
Heat oil, add fideo and cook until lightly browned.
Add onion and cook until tender. Add garlic, tomato sauce and water and season
to taste with salt and pepper.Bring to a boil. Lower heat, cover and simmer
for 10 minutes.
Thats the plain version...add ground beef, fry it on the side...then add the
cooked, drained beef when you add the garlic etc.
