It actually becomes somewhat sticky, and runny. The smell will also become a little sweeter.

Mold and when the salt forms crystals on the outside. And remember that stinky cheese isn't always bad cheese.

The smell is rancid and the texture is almost thick slushy. There should also be an additional more molds than before.

That's a hard one to figure out. When you buy it, it already looks old and is really stinky smelling but it's so good. I go by how long I have had it in the fridge.
