how do i make changes to a document i've scanned. where should i scan it to ?

save the scanned image to a file, then open that saved file in an image editing program of your choice (paint/gimp/photoshop etc).

if you mean you're scanning text, then you cannot edit it once scanned as you would edit text in microsoft word/wordpad/notepad because the page is being scanned as a graphical image, and not as words.

to do this (have a scanned page converted into text) you need additional OCR (optical character recognition) software which will turn a scanned page into text which can then be edited in a text editor.

You need some OCR software to be able to edit a text document.
