I don't think the GC has a body-on-frame chassis like pickup trucks have, so I think you would have a rather compromised hauling and driving capability.
Jeep used to make a midsized pickup, the Comanche, based on the same platform as their Cherokee, but it was not rated for loads as say a Chevy, Ford or Dodge pickup.
In a unibody construction vehicle, when you remove part or all of the roof, you also remove a structural element which helps keep the vehicle more rigid.
I suppose you could take a Sawzall and start cutting from the B-pillar to the rear, but the back of the vehicle would probably be pretty flexible. You would need to weld some steel tubing under the vehicle to mimic a ladder frame chassis to bring that stiffness back.

With a Saws-all and a little welding and fabricating you can make a nice truck from a Grand Cherokee. You will have to cut the top off behind the doors, so you will have a very short bed, kind of like an Explorer Sport Trac, or Chevy Avalanche. However if you have some mechanical expertise you can build the vehicle you want.

For the right coin you can do anything. The real question is why? and is it worth it? If you just need the utility of a truck then think about a class III hitch and a trailer.

Like the rest of the answers, you can do anything with the right amount of money. It would cost more to fabricate a bed onto a G.C. than it would to buy a pickup. If you have lost of time and money, go for it! You would create a very interesting ride that I'd like to see.
