Calico Ghost Town has a panning exhibit where you can learn. But, if you're looking to do the real thing, parts of Big Tujunga Canyon are good. There's a creek that empties into Big Tujunga Creek a couple of miles into the canyon, called Gold Creek or Gold Canyon. There's almost always water flowing through Big T Canyon, so you might find some placer gold.
Be aware: you might need a permit to pan. There are mineral rights laws to consider. Good luck!

Julian is great too. Its about 45 mins from San Diego. They are known for their Julian pies which are amazing.!
