If I was to boil some water and I accidentally leave it until it boils to nothing, what would you call that white residue all inside the pot?

Often that is the residue left by minerals in the water. Calcium carbonate (lime) and other minerals are present in rocks and soil and naturally leach into natural souces of water and thus are always present to some degree. When water boils, it becomes vapor or steam. The impurities (organic and inorganic dissolved solids) remain as the white residue.

The white residue is the minerals in the water, left behind when the water boils away.

Lime and mineral deposits if you're talking about the white stuff that's left when a pot is completely dry.

Same gunk in the water that causes scale in bathroom tubs.
