Try this. Stuff your chicken breast with feta cheese, torn fresh coriander leaves and a sprinkling of paprika. Stretch some rashers of streaky bacon with the back of a knife. Wrap the bacon around the chicken breast like a lattice so that it is completely wrapped. Fry over a high heat in a little olive oil for two or three minutes on either side and then bake in a hot oven (180C) for 20 - 30 minutes until the chicken is cooked through. Serve with new potatoes in butter and a green vegetable, peas or green beans. Delicious and no need for toothpicks or needles.

Poultry Pins or Skewers, Toothpicks or Bamboo Skewers may be used. But, you don't really have to use any of those at all. If the chicken piece is wide enough, stuff and place fold bottom down in pan. Another way is to mound the chicken on top of the filling, tucking under the edges.

If you are using poultry needles and sewing with thread. If you are leaving the needles in during cooking then wooden picks are the safe bet. Just an opinion.

no, dont use a needle, use a tooth pick, a needle is unsanitary, if you use it, you can get pricked and get an infection from using it, please dont use it and be safe. make sure you wash your chicken before you start.
