My favorite way to cook spinach:

1) wash the spinach thoroughly

2) heat up 2 tbsp olive oil in a large skillet, add 2 cloves garlic, chopped, and saute the garlic over medium high heat until tender.

3) Add the spinach. Stirring frequently, lightly toss the spinach leaves from bottom to top, moving the raw leaves to the bottom and cooked leaves to the top until all the leaves are still bright green but wilted. Add salt and fresh ground pepper. Serve.

(Also good with a cup of sliced mushrooms added when you are sauteeing the garlic)

Put it into a pan with about 2 Tbls of water and some butter.
Fold the Spinach regularly. Within about 2 minutes it will be wilted.

It is really easy and delicious! Put your young tender spinach in a large bowl. Add green onions and sliced radishes. Fry about 10 slices of bacon very crisp, reserving the drippings. Crunch that up in the salad as well. Now you are ready to wilt. Boil 2 cups of white vinegar and ½ cup of sugar. Add spices to taste. I just use a little salt and pepper. When it is almost ready to boil, reheat the bacon grease. The bacon drippings must be very hot. Pour the vinegar mixture into the hot grease, and immediately pour that over the spinach. Stir and wait 10 minutes. Wonderful!

I like to sautee spinach for just a few seconds in hot bacon grease - it wilts the spinach and adds a nice hint of bacon flavor.

You can make a wilted spinach salad by mixing spinach with hot bacon grease and vinegar.

Sprinkle with salt, let stand for a few minutes then rub with your your fingers to get rid of most of the juices. Then add some cheese , eggs, dill, and onion, put in a pie crust and you've got a great spinach pie .

don't wilt it, steam it!

speaking of i have spinache that wilted it was due to it getting too cold now it's bad.

You can steam it, or saute briefly with a tiny bit of butter and the water that clings to the leaves after you wash them. Saute if you want to infuse another flavor into the greens, like garlic.

With a little olive oil or some stock in a large skillet. It only takes a few minutes so watch it.

Rinse it to get the sand and dirt out. Shake off as much water as you can and toss it in a hot pan or pot. Plenty of water to do the job.
