Maple Pecan Cookie
INGREDIENTS
2 1/2 cups pecans, ground in food processor until the size of small pebbles
2 cups quick oats, ground
1 cup unbleached white spelt flour, sifted
1 cup whole spelt flour, sifted
1 cup maple syrup
1/2 cup unrefined coconut oil
1 tablespoon real vanilla extract
1/4 teaspoon sea salt
30 pecan halves
1. Preheat oven to 350F. Line a baking sheet with parchment paper.
2. In a large mixing bowl, combine the ground pecans, oats, and sifted white and spelt flours.
3. In a medium mixing bowl, whisk together the maple syrup, oil, vanilla, and sea salt.
4. Mix the wet ingredients into the dry and stir well to combine.
5. Scoop 1/4 cup of dough onto lined baking sheet and gently press down using your palm. Repeat with the remaining dough. Press a pecan half into the top of each cookie.
6. Bake for 12 to 14 minutes or until golden brown.
Makes about 30 cookies.

Walnut or pecan cups
1 (3 ounce) package cream cheese
1/2 cup butter
1 cup all-purpose flour
1 egg 1 tablespoon butter
1 teaspoon vanilla extract
1 cup brown sugar
3/4 cup chopped walnuts
DIRECTIONS:
1. Preheat the oven to 375 degrees F (190 degrees C). Line mini muffin pans with paper liners.
2. In a medium bowl, stir together the cream cheese, 1/2 cup butter and flour until a dough forms. Roll into 1 inch balls and press them into the bottom and up the sides of the prepared muffin cups.
3. In a small bowl, blend together the egg, butter, vanilla and brown sugar until smooth. Stir in walnuts. Spoon the mixture into the muffin cups, but do not fill all the way to the top or the mixture will bubble over.
4. Bake for 15 to 20 minutes in the preheated oven, until the crusts are golden.

1 cup butter flavored shortening
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
2 teaspoons Mexican vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups milk chocolate chips

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter flavored shortening, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla .Combine the flour, baking soda and salt; gradually stir into the creamed mixture. Finally, fold in the chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until light brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
Note:
Mexican vanilla extract can be found in Mexican grocery stores. If you can't find it, feel free to substitute regular vanilla extract.

I'm at work so I don't have the recipe on me, but it's a pretty standard rich peanut butter cookie, then while it's still warm out of the oven, put a hershey's kiss on top, flattening it down a little bit...yum!

Of course, chocolate chip is a general favorite, but if you want to try something a little different, snickerdoodles and soft molasses cookies are a very close second/third :) YUM

I like Pepperidge Farm Snickerdoodles. I like to put 'em in the microwave for 15 seconds -- just long enough to get soft and warm. Then they taste like they're fresh out of the oven. But there are no bowls or spoons or cookie sheets to clean. :oD

take a receipe for a peanut butter cookie. mold the cookie dough around a snickers miniture candy bar and bake... delecious.
have receipe but not here.
