make a alfredo type sauce and then add Jalepeno
take a little cream cheese or cream and butter and warm very slowly in sauce pan. melt the cheese into it stirring with a whisk. Do it very slowly over low heat or it will burn and be bad, don't make it to thin, add peppers, it will thicken some as it cools.

OK check this one out!!! As for the nacho idea with the lettuce , celery stuff ??? I DON'T THINK SO!!! JUST ...melt about 1or 2 cups of cheddar cheese (shredded)in the microwave for about 35 seconds,or so...
And add about 1/2 cup of milk to make it creamy,diced 2or3 pickled jalepenos,pressed
fresh garlic,(or powdered,)add some diced pimentos(the little red things) And Shazam!
dip on ... You could also go to Smart & Final and find a huge can of already prepared melted cheese !!! Just pour your Melted Mix over some tortilla chips and enjoy!

You have to make a cheese sauce. Use a double boiler so you don't scorch the cheese. As the cheese is melting, add a little bit of milk and work in. Keep this up until you are left with nothing but velvety smooth sauce.
Melting the cheese alone will be disgusting.

You can use equal amounts of melted butter and flour to make a rue/gravy (about 2 T. each) and whisk as you add some milk (about 1/2 c.) to make smooth on a low/med heat. When it's smooth just add shredded cheese slowly while whisking until you have your desired amount of cheese sauce. Starting the sauce with the flour and butter will keep the cheddar from getting lumpy and stringy. The longer you heat it the smoother it will get. If it looks like it is going to be too thick as it cools, just add a little more milk. Add any flavors you like, but remember if you add something with a liquid like Rotel tomatoes, make sure you don't add too much milk.

The easiest way is to go to the store and get a couple of cans of Campbell's nacho cheese in the soup isle, heat over med.-low heat with milk as directed. I would use less milk than the directions say if you like it a little thicker as I do. Easy and delish! Also very good with taco meat, jalapenos and sour cream or whatever you like on your nachos.

1 (8 oz.) pkg. cream cheese
1 (16 oz.) pkg. sour cream
1 envelope taco mix seasoning
Chopped celery
Chopped onion
Chopped green pepper
Shredded lettuce
8 oz. shredded Cheddar cheese
Chopped tomato
1 lb. Nacho cheese chips
Beat sour cream, cream cheese and taco mix well with beaters. Stir in chopped celery, onion and green pepper. Spread in 9 x 13 inch pan. Top with lettuce, Cheddar cheese and tomato. Serve with Nacho cheese chips.

make a cheese sauce..melt 1 tbsp of butter with some crushed garlic, cumin, and chili mix spices, add 1 tbsp of flour and blend, and then add milk on medium-low heat, stir constantly until creamy and thickening, turn down temperature then add your cheese- 1/2-1 cup or to taste. Then add 1/2 salsa -drained -or to taste. Voila!

I'm not sure about making dip with cheddar, but if you've got a can of chili, you can top it with shredded cheese & maybe add some onions or whatever else you like. Then use chips instead of spoon and go to town dipping with them instead.

If you try to melt chedder cheese and use it like velveeta it will get hard and dry, the only way I know of making nacho cheese dip is using velveeta, sorry
