Sautéed Spinach with Garlic

Serves 4
Serve with a wedge of fresh lemon.

2 tablespoons olive oil

2 cloves garlic, peeled and thinly sliced lengthwise

2 pounds fresh spinach, washed and leaves damp

Salt and freshly ground black pepper

Olive-oil cooking spray

1. In a large sauté pan, heat olive oil over medium heat. Add garlic, and cook until golden brown, 2 to 3 minutes. Using a slotted spoon, transfer garlic to paper towels; reserve. Discard oil.

2. Spray pan with cooking spray, and heat over medium heat. Coarsely chop spinach and stalks. Working in batches, add damp spinach to the pan. Cover, and cook until spinach just begins to wilt, 4 to 5 minutes. Transfer the cooked spinach to a metal bowl, and cook remaining spinach. Season with salt and pepper. Sprinkle reserved garlic over spinach, and serve warm.

Here's a very simple, healthy recipe for you to enjoy:

Chop some garlic. Add olive oil to a sautee pan and brown the garlic (but make sure not to burn it). Add the spinach and cook for just a few minutes until the leaves are still bright green but slightly wilted. Be careful not to overcook. Season with salt and pepper to taste.

If you'd like, you can also add pine nuts. Simply brown the pine nuts for a few minutes in a separate sautee pan, without any oil. Add pine nuts to sauteed spinach.

This is simple, quick and tasty:

Heat 2 tsps of olive oil over medium-high heat in medium non-stick saucepan. Add one clove of garlic, crushed. Add 3 large handfuls of triple-washed spinach (Newman's organic is my fav).

Stir for about 4 minutes. The spinach will wilt and saute down to about 1 cup of cooked spinach. Season with salt and pepper. If you need more, adjust accordingly and use a larger pan.

cut up two gloves of garlic place in pan with about 2 tablespoons of olive oil. this is for fresh spinach if you use frozen spinach do the same but ring the spinach out in a towel. you don't want the spinach wet. you might have to add olive oil. so the spinach doesn't stick to the pan

Take 2 fresh garlic cloves and minced them.. In a frying pan add olive oil and the garlic sautee but do not burn the garlic (it will taste bitter) add in the clean raw spinach toss and cook for only 3 minutes add salt, pepper and hot pepper flakes, serve hot.

I mince a clove of garlic and put it into about 3 tablespoons of olive oil in a heated frying pan, Once it is slightly golden, you toss in the spinach and stir until it wilts. Add a little seasoned salt....voila! Delicious!

Fry up several pieces of smoked bacon and when the bacon has been cooked add in canned or chopped fresh chopped spinach to the bacon fat and add salt, pepper, some raw garlic and/or chopped onion pieces. It is a great flavor and taste combination.
