Baileys Irish Cream Cheesecake
As you can well imagine, this is an incredible dessert. It will make
your reputation as an outstanding cook.

12 to 15 Oreo cookies
2 tablespoons butter, melted
2¼ C sugar
4 teaspoons cornstarch
3-2/3 cups cream cheese, at room temperature
3 large eggs
½ cup half-and-half
1 teaspoon vanilla extract
½ cup Bailey's Irish Cream
1/3 cup semi-sweet chocolate chips, melted
Preheat oven to 350°F. Butter bottom of a 9-inch springform pan. Make
a hot water bath by setting the springform pan in a larger pan.
Holding down the springform pan so it doesn't float, fill the larger
pan with enough hot water to come one inch up the side of the smaller
pan. Then remove the springform pan and set aside the larger pan of
water while you prepare and bake the crumb crust. (The water will cool
somewhat, but that's okay.)


Pulverize the Oreos in a food processor or with any handy blunt object
to make 1½ cups of crumbs. Add the melted butter to the crumbs, mix to
incorporate, and press mixture into the bottom of the springform pan.
Bake for 9 minutes, then remove and cool while mixing the cheesecake.


Stir together the sugar and cornstarch in the bowl of an electric
mixer until combined. Add the cream cheese and blend, at medium speed,
until smooth and creamy, about 5 minutes. Beat in the eggs one at a
time, beating well after each addition. Scrape down the sides of the
bowl, and add the half-and-half in a thin stream.


Melt the chocolate chips for a few seconds in the microwave, then stir
in the vanilla extract and the Baileys until mixture is smooth. Add
the mixture to the cheese mixture and blend well, scraping down the
sides of the mixer bowl as needed.


Pour batter into the cooled Oreo crust, and place the pan into the
prepared water bath. Place pan in the middle of the oven and
immediately reduce the oven temperature to 250°F. Bake for 90 minutes.
Remove from oven and allow cheesecake to cool completely. Refrigerate
for at least 2 hours, then "spring" the pan and remove your
masterpiece. Keep refrigerated until serving time.

EASY EASY Cheesecake!

1 1/4 cups graham cracker crumbs
1/4 cup white sugar
1/2 cup butter, melted
2 (1.3 ounce) envelopes whipped topping mix
2 (8 ounce) packages cream cheese, softened
2 fluid ounces cherry brandy

DIRECTIONS:
In a medium bowl, combine graham cracker crumbs, butter and sugar. Mix well and press into the bottom of a 9 inch springform pan.
In a large bowl, mix the whipped topping powder as directed on package and beat until thick. Cut the cream cheese into small cubes and drop them into the whipped topping, one at a time, while beating. Pour in the cherry brandy and beat another 5 minutes at high speed.
Spoon the filling into the graham cracker crust and smooth the top. Refrigerate 2 to 4 hours, or until set.

Fudge Truffle Cheesecake

Here's a recipe for a killer cheesecake I think you will like,
especially if you are a chocoholic!

2 cups (12 oz. pkg) Semi-sweet choc. chips
3 pkgs. (8 oz. ea.) cream cheese, softened
1 14oz. can sweetened condensed milk
4 eggs
2 tsps. vanilla
1 prepared chocolate cookie crumb crust

Heat oven to 300. In heavy saucepan, over low heat, melt chips, stirring
constantly. In large bowl, beat cream cheese till fluffy. Beat in milk
until smooth. Add melted chips and remaining ingredients. Pour into
prepared crust. Bake 1 hour and 5 minutes, until center is set. Yummm!

1 8 ounce package of cream cheese softened
1/3 cup sugar
1 8 ounce tub of cool whip thawed
1 graham cracker pie crust

mix cream cheese and sugar until well blended
then gently stir in the cool whip
then put in to the pie crust
refrigerate for about 3 hours or overnight
you can top with strawberries right before serving

Chocolate Malted Milk Cheesecake

5 (8-oz.) packages of cream cheese, softened
1 1/2 cups sugar
1 cup malted milk powder
1/2 cup unsweetened cocoa
1 (8-oz.) contained sour cream
2 teaspoons vanilla
1/4 teaspoon salt
5 eggs
1 cup whipping cream
1/2 cup chopped malted milk balls

Heat oven to 350 degrees. Line bottom only of 13x9 inch pan with foil. Spray foil with nonstick cooking spray.

In large bowl cream cheese at medium speed until fluffy.

In medium bowl, combine sugar, malted milk powder and cocoa, mix well. Add to cream cheese, beat at low speed until combined. Beat at medium speed until smooth.

Add sour cream, vanilla, and salt and beat well

Add eggs 1 at a time, beat until just combined after each addition

Pour batter into foil lined pan. Place pan in larger shallow pan, place in oven. Add hot water to shallow pan until half full. Bake at 350 degrees for 50 to 55 minutes or until set.

Remove from oven. Remove cheesecake from water bath, place on wire rack. Cool about 1 hour, or until lukewarm. Invert cheesecake onto cookie sheet, refrigerate at least 3 hours or overnight.

To serve, beat whipping cream until stiff peaks form. Cut cheesecake into squares and top with whipped cream and garnish with chopped malted milk balls.

Go to Kraft.com. They have several cheesecake recipes made with jello brand pudding and such . They have all varities as well .
You should be able to find several there.
