2 large boneless skinless chicken breasts
cajun seasoning
8 slices bacon, cooked in advance if possible
4 slices swiss cheese
1 cup white button mushrooms
2 hoagie rolls (aka hogie, sub or grinder rolls)
sweet vadalia onion salad dressing, if you can't find the other (Ken's brand here on the east coast) or honey mustard, if you can't find the other
Optional ingredients
lettuce
tomatoes
onions
avocados, slices

Low Calorie Sandwiches
Sprinkle chicken breasts with cajun seasoning, then spray lightly with "Pam" or other cooking oil spray.
Grill over med to med low heat for 6-8 minutes or until done.
While chicken is grilling saute mushrooms in sm amount of butter.
If you haven't precooked the bacon, you can do it now.
Heat sub rolls in oven until hot.
When chicken is done assemble as follows per sandwich --
Spread sweet vadalia dressing or honey mustard on each half of roll generously.
Place one slice of swiss cheese.
Place 2 slices of cooked bacon.
Spread cooked mushrooms
Place 1/2 of chicken breast.
One slice of swiss cheese.
2 slices of bacon.
1/2 chicken breast.
Top of roll.
Put on loose sweatpants --
Eat!

This does call for some specific ingredients so you'll have to shop.
Try making a picnic loaf:
Slice: french loaf lengthwise
Drizzle both sides with a zippy dressing, not mayo based. I use Roasted Red Pepper and Garlic by Renee's
Layer Prosciutto, roasted red peppers, basil leaves, thin sliced sweet onion, and havartti cheese.
Drizzle more dressing
repeat layers
wrap well in plastic wrap
place sandwich in roasting pan
place a medium weight on directly on the sandwich. Phone book works well, two if you live in a small town. Couple of bricks also works
store in fridge overnight
cut into slices and wrap slices in plastic and enjoy
rest of Sandwich will last for monday to friday in the fridge.
You can change up the ingredients to customize it to your own tastes.
My kids love mine, they say it taste like gourmet pizza.

Here is one of mine that people seem to love. You can use chiicken and turkey too - as long as it isn't processed. It has to be cooked at home to make the difference. I think it's the love and care that goes into it that makes it special:
The Unbeatable Beef Sandwich – from Mom!
Many people do not seem to realize that the layering of the ingredients is extremely important in the taste of any sandwich. I can put all the mayonnaise in the world on the bread, but if the turkey is tasteless or dry, the sandwich is disappointing.Try the following:
2 slices Texas Toast -style whole grain or 12 Grain with Oats and Honey bread.
1 Tablespoon spreadable pure butter
Real Mayonnaise (never Miracle or Salad Whip)
Dijon Mustard (only Dijon - none other)
Thin slices of thinly sliced medium rare steak, or chicken or turkey
4 thin slices of tomato
3 thin slices of Vidallia onion
Crisp inner rib of Romaine Lettuce
2 large basil leaves
salt
fresh cracked black pepper
Spread your bread with butter, both slices.
Spread each slice with 1 teaspoon real mayonnaise.
Place Basil leaves on one slice
Place beef slices on basil
Spread a good dollop of mayonnaise & Dijon (only Dijon!) on beef slices
Layer tomato slices on turkey
Put Salt and cracked pepper on tomato - don't be shy!
Layer onion slices on tomato
Layer Romaine lettuce on onion
Put second slice of bread on top, press lightly, and enjoy!
For a treat, put crisp bacon slices (3 slices per sandwich) on top of meat after you put mayo/dijon dollop on top.

DAGWOOD SANDWICH
Recipe courtesy of Kenny Johnson, Uncle Fo's
4 French rolls
1/4 pound prosciutto ham, sliced thin
1/4 pound mortadella, sliced thin
1/4 pound salami, sliced thin
2 balls fresh mozzarella, sliced
1/2 pound provolone, sliced
1 log fresh goat cheese, sliced
Oil and vinegar
Dried oregano
Salt and pepper
4 whole plum tomatoes, sliced
2 yellow onions, thinly sliced
Slice open French buns and assemble the sandwich of your dreams.
Use the ingredients in any combination you wish. There are no rules
when making this Dagwood sandwich.

this a quick breakfast sandwich.
1.frankfurters sauteed in ketchup sauce
2.3egg white
3.lettuce,tomato, mayo,cheddar slices
4.miracle whip
5. 3 slices saralee white or brown bread
using the mayo to butter each bread slice layer the ingredients as follows franks.egg white,lettuce,tomato.cheese and then miracle whip on top.put all this together cut in manageable slices adn enjoy with ur favourite beverage

Just had it for lunch!
Fresh spinach leaves (I get the mix so it has carrots in it too), cucumber slices, alfalfa sprouts, tomatoe slices, and mozerella cheese slice on whole wheat with a drizzle of vinagrette. So healthy and SOOO good!

you can use any meat but what I have done is to take mayo and add herbs to it. example 1/2 cup mayo + 1/2 cup chives for an onion taste. these are fresh herbs. used in equal portions cilrantro, garlic chives are also good.
