My mother always used to cook tripe for us in the 1940's and early 1950's/
She would start by washing it in water, and then cut it into fairly wide strips and cutting the strips into smaller lengths if necessary, then into a casserole, or roasting pan, with butter,onions, salt and pepper, and covered with milk (in those days it was more likely to be powdered milk made up) and cook in the oven for about an hour to hour and half. When cooked serve with mashed potatoes.

Tripe can be boiled and served with pepper and vinegar, it goes well with fresh tomatoes. My father used to eat it and I tried it a few times and found it very tasty. The French also use tripe in more elaborate dishes, usually in northern France.
I think it is low in fat and high in protein.

Tripe absolutely stinks, dogs love it personally I wouldn't go near the stuff, is there a correct way to cook rotting flesh?

Stick to the hamburgers they're moderately safer and a lot less smelly!

I've tried making Menudo which is a Mexican soup made with tripe. It's sooo gross. It smells like rotten meat, feels like rubber in your mouth. It really isn't worth the time.

My nan cooks it for her dog and it smells absolutely disgusting. Don't do it!!!

cut into bite size pieces add onion and potato and simmer for 45 mins, but it is a acquired taste
